Making Instant Pot Shredded Chicken Tacos is super simple, in fact I tend to make shredded chicken often and freeze it to help with busy nights.
It's an easy meal prep option and perfect for this Smoky Chicken Taco Recipe.
This recipe is inspired from my son who used to work at a fast food Mexican restaurant.
It quickly became a favorite of my Picky Eater and so we adapted the recipe to fit what we love. And now, it's a family favorite!

I love all the textures and flavors. Shocking that my picky eater loves it too. But he does! Honestly the secret is in the sauce, the Smoky Sauce which really adds to this recipe.
I also love the crunch of the tortilla chips. Crazy I know, but it's so good.

Ingredients for Shredded Chicken Taco Recipe
- 3 Cups Shredded Chicken about 2-3 chicken breasts
- 1 Cup Shredded Lettuce
- 2 Cups Spanish Rice Packet - Cooked According to package directions
- Tortilla Chips
- 1 Cup Thousand Island Dressing
- 1 ½ Tbs Liquid Smoke
- Cheese
- Sour Cream
- Salsa or Pico
- Large Flour Tortillas
How to make Shredded Chicken Taco Recipe

- Make Shredded Chicken in your Instant Pot / Pressure Cooker using the directions
- Cook 1 box / packet Spanish Rice and follow box directions
- Mix 1 cup of Thousand Island Dressing with 1 ½ Tbs Liquid Smoke and set aside
- On a large flour tortilla place ⅓+ cup of shredded chicken
- Drizzle 2 Tablespoons of Thousand Island Liquid Smoke Dressing over chicken
- Add a couple of spoonfuls of Spanish Rice
- Top with Shredded Lettuce
- Add Cheese and Sour Cream
- Top with Salsa or Pico
- Add 3-4 Tortilla Chips roughly broken
- Wrap burrito style taking the bottom and folding over mixture
- Fold in sides and continue to roll until wrapped
- Slice in half and enjoy!

Shredded Chicken Taco Recipe
Ingredients
- 3 Cups Shredded Cooked Chicken
- 1 Cup Lettuce
- 1 Cup Thousand Island Dressing
- 1 ½ TBS Liquid Smoke
- 1 Cup Cheddar Cheese Grated
- ½ Cup Sour Cream
- ½ Cup Salsa
- 8 Extra Large Flour Tortillas
- 25 - 30 Corn Tortilla Chips
- 1 Package 2 Cup Spanish Rice
Instructions
- Make Shredded Chicken in your Instant Pot / Pressure Cooker using the directions:
- Place 1 Cup water or Chicken Broth in Bottom of Instant Pot or Pressure Cooker. Place 2-3 Chicken Breasts in Instant Pot on Trivet. Sprinkle Salt and Pepper over Chicken Breasts. Sprinkle 2 teaspoon crushed garlic on chicken. Close Instant Pot Lid and check to make sure pressure valve is closed. Set on Manual (Presser Cook) High for 18 minutes. Allow a 20 minute Natural Release. Remove Chicken Breasts and one at a time shred chicken with forks.
- Cook 1 box / packet Spanish Rice and follow box directions
- Mix 1 cup of Thousand Island Dressing with 1 ½ Tbs Liquid Smoke and set aside
