Want a thicker sauce? It’s super easy. Make a Cornstarch Slurry with 2 Tbs Cornstarch and 2 Tbs water and mix, then add to your recipe at the very end right in the Instant Pot to thicken the sauce. Yum!

Sweet and Sour Meatballs
Ingredients
- 26 Frozen Meatballs approximately 1 bag
- 1/3 Cup Brown Sugar
- 1/4 Cup Soy Sauce
- 1/3 Cup Ketchup
- 1 1/2 Cup Pineapple Juice
- 1 Cup Pineapple Tidbits or Chunks
- 1 Sweet Onion
- 1 Red Bell Pepper
- 1 Yellow Bell Pepper
- 1 Bunch Green Onions * optional
- 1 tsp Sesame Seeds * optional
Instructions
- Pour Pineapple Juice, brown sugar, soy sauce, and ketchup into the Instant Pot Pressure Cooker. Stir mixture to combine.
- Pour 1 bag (approx. 26 meatballs) into Instant Pot.
- Set to Manual for 2minutes. Quick Release Pressure
- Cut Onion and Bell Peppers into large chunks.
- Toss Onions, Bell Peppers and Pineapple into Instant Pot and give a quick stir.
- Set to Manual for “0” minutes. Quick Release Pressure
- (Optional) 2 Tbs Corn Starch with as little water as possible to make a slurry. Add to Instant Pot and stir to thicken sauce.
- Garnish with Green Onions and Sesame Seeds. Serve over Rice.

I’m wondering what brand / type of meatballs you like to use most?
Hi Diane! We purchase frozen meatballs from Costco, not sure the brand as well as from Trader Joes and Ikea. I find the Italian Meatballs seem to have been flavor and aren’t over powering even in a recipe like this. It’s a personal preference for sure.
Is that correct when you put the vegetables in “0” cook time?
Yes, use your +/- button and adjust to 0 (zero) minutes. Your Pressure Cooker will heat up, and seal and then beep. Then you can release the pressure. Works wonderfully!
could 1 lb of ground beef made into meatballs work?
Hi Marg! The time for pressure cooking would change if you use ground beef to make homemade meatballs. You would want to use the saute button and brown the meatballs on all sides first. And as always hamburger should reach 165 degrees internally to eat.
