    Grandma's Scotcharoos Recipe

    Scotcharoos with Peanut Butter Chips and topped with Reese’s Pieces. 

    These were served at a Holiday Church pot-luck and my Picky Eater son ate more than he should have.  Needless to say he asked me to make them at home!

    We’ve all had traditional Scotcharoos with butterscotch chips, but what about Peanut Butter chips instead?  WOW!  I love it! 

    I even love the added Reese’s Pieces added on top too.  Just a fun combination.  This was among the first desserts eaten at a Church Pot Luck recently.  Needless to say I had to duplicate it.

    I don’t know about you, but when I take something to a Pot Luck I want everyone to love it. 

    There is nothing worse than taking home most of what you brought.  It’s so defeating!  Well these Scotcharoos will be devoured, I promise.  😉

    Of course you can always skip the Peanut Butter chips and use Butterscotch Chips in this Scotcharoos recipe.  But why not change it up?  Live a little!

    How to serve Scotcharoos?

    Scotcharoos are best served at room temperature.  Take out of airtight container and place on plate and allow to soften up on the counter for 10-15 minutes before serving.

    What makes Scotcharoos hard?

    No one likes to bite into a hard Scotcharoos.  It’s like eating Captain Crunch and tearing up your mouth!  haha… 

    Scotcharoos become hard when they are stored in the refrigerator OR when you cook the sugar mixture too long.  You only want to cook the sugar mixture until it reaches 125-130 degrees.

    Quick Tips

    Melt the chocolate and Peanut Butter Chips in the microwave for 1 ½ – 2 minutes. 

    Stir after every 30 seconds.  OR if you have an Instant Pot, use a large glass bowl to place your chips into and add 3-4 cups of water on Saute’ and heat up the water. 

    Place the bowl on top and the steam will melt the chips.  Brilliant!

    To the point that he asked me to find out the recipe and make some.  haha.. Well after one bite it wasn’t hard to figure out the difference. 

    By substituting Butterscotch chips for Peanut Butter Chips you have a perfect blent of flavors.

    Scotcharoos

    A fun Twist on Scotcharoos with Peanut butter chips in the chocolate topping. If you love peanut butter then this recipe is for you!

    Ingredients

    • 3 Cups Sugar
    • 2 Cup corn Syrup
    • 2 Cup Peanut Butter
    • 8 Cups Rice Cereal
    • 1 Bag Chocolate Chips
    • 1 Bag Reeses Peanut Butter Chips
    • 1 Bag Reeses Pieces with Peanut Butter Cups *Optional Garnish

    Instructions

    • In a large pot add sugar and corn syrup. Heat over medium high heat until a full boil. Let boil for 10 seconds and remove from heat. IF you have a digital thermometer you want to reach 125 - 130 degrees.
    • Add Peanut Butter and stir to melt
    • Add Rice Cereal and stir to combine.
    • Pour in a greased cookie sheet and spread evenly.
    • In a separate bowl combine chocolate chips and peanut butter chips. Melt in microwave for 1 ½ - 2 minutes. Stir after every 30 seconds.
    • Pour over Rice Cereal mixture and spread evenly.
    • Add Reeses Pieces as garnish if desired
    • Allow to cool to set up. Cut into squares and serve.
