What makes this instant pot steak fajita recipe so amazing is that you can have dinner ready in no time flat.
While fajitas don’t normally take long to prepare in the first place, there’s just something fun about making them in an instant pot!

Ordering a plate of steak fajitas at your favorite restaurant is nice, but making them in the comfort of our own home can be just as much fun (if not more so).
Not only that, but you can eat as many as you want and pile the cheese sky high.
These steak fajitas are a pretty great meal on their own, but pairing them with my black bean and corn salsa and a side of tortilla chips is a great way to add more color and options to your plate!

What's in Easy Steak Fajitas?
Seasonings:
- 2 tablespoon Chili Powder
- ½ tablespoon Paprika
- ½ teaspoon Onion Powder
- 1 teaspoon Garlic Powder
- 2 teaspoon Cumin
- ¼ - ½ teaspoon Cayenne Pepper *optional
- 2 teaspoon Sugar
- ½ teaspoon Salt
- 1 Tbs Corn Starch
Additional Ingredients
- ½ large Sweet Onions - Sliced
- Green Bell Pepper - Sliced
- Red Bell Pepper - Sliced
- Yellow Bell Pepper - Sliced
- 1 ½ lbs Flank Steak
- 1 medium Lime
- 8-10 6-inch Flour Tortillas
Garnish
- Sour Cream
- Chopped Cilantro
- Cheese
- Salsa

How to make Easy Steak Fajitas?
- Mix all of the seasoning ingredients in a small bowl and set aside.
- Slice your flank steak in very thin rounds.
- Slice each round into 4-5 bite size pieces. Set aside.
- Slice your onion and bell peppers, set them aside.
- Divide the seasoning mixture in half and sprinkle half over the veggies and half over the meat. Toss to coat.
- Place a cup of water into your instant pot. Add trivet to bottom with a layer of foil. Place the flank steak on top of the foil.
- Set it to manual pressure cook on high for 7 minutes and allow a 3-minute natural release (NR). Then do a quick release to release the remaining pressure.
- Place your sliced veggies on top of the steak and quickly close the lid.
- Set to manual pressure cook on high for 1 minute and do a quick release.
- Open the lid and remove the beef fajitas and veggies.
- Squeeze the juice from one lime over the fajitas and serve on warm tortillas.
- Garnish with cheese, sour cream, salsa, cilantro or your other preferred toppings.

FAQ
Flank steak makes a great cut of beef steak for fajitas. Cutting the meat against the grain so that it's nice and tender is a great way to enjoy the meal without feeling like you’re spending too much time chewing. Other cuts of meat could work as well, like skirt steak, just make sure that you cut it into nice and thin, even-sized strips for even cooking.
This recipe is completely gluten-free if you substitute the flour tortillas at the end for corn or other gluten-free option! Double-check the labels and ingredients for allergy warnings just in case!
The ingredients in the fajita mix are keto-friendly but you may wish to substitute the flour tortillas for a more keto-friendly option or alternative.
Think of your favorite fiesta sides! Chips and salsa, Mexican rice, refried beans, salad, or Mexican street corn if you’re feeling up to it!
You can top your fajitas with anything you want. While some people may choose to add dollops of sour cream and piles of cheese, others may want their’s as plain and simple as possible. There’s no wrong way to enjoy your food!
Cheddar cheese and Colby Jack are both two common kinds of cheese to include on a fajita but if you’re looking for other alternatives consider Cotija cheese or Queso Fresco.
