Your ingredient list is nothing fancy. Any flavor of Ritz crackers will work, but we prefer the Roasted Vegetable flavor. You will also need poppy-seeds (not pictured) which can be found in your spice aisle. Everything adds texture and flavor to this recipe, so don’t leave anything out!
After placing the chicken in a casserole dish and mixing the gravy ingredients you need only to crush the crackers and toss with butter. It’s really that simple. This was one of the first recipes I taught my youngest child, which is also his favorite because of how simple the steps are for this recipe. It looks good enough to eat before going into the oven, however something magical happens in the oven and the flavors combine to make this great comfort recipe. Serve this over rice or mashed potatoes and you just might find yourself with Chicken Poppy Seed Casserole on the menu 3 times a week as well.
