Fruit Pizza recipes became popular years ago and for good reason. It didn't matter what shape they were presented in, everyone wanted a slice. So why not enjoy on a soft Swig Sugar Cookie! That's right, this recipe uses my Copycat Swig Sugar Cookie recipe as the crust for this cookie recipe. Brilliant I know!

Fruit Pizza Sugar Cookies Topping Tips
- Small pieces of fruit are best. It's easier to take a bite without fruit falling off if fruit are cut into small bite size pieces.
- Dip Sliced Bananas in Lemon Juice to prevent from browning. Nothing worse than a brown banana on a gorgeous Fruit Pizza Cookies
- Use Fresh Fruit whenever possible. Fruit in season will make a delicious cookie
- Customize Cookies by making everyone's favorite fruit combination. Or choose fruit colors based on a theme. Red and Green Fruit for Christmas. Yellow and Orange Fruit for Fall.

How to make Fruit Pizza Cookies
For this recipe, I used my Bosch Universal Plus Mixer. You can read why I love my Bosch and have grown up using a Bosch Mixer. You can of course use a Hand Mixer. Make sure you whip your ingredients well if using a hand mixer for best results.
- Cream butter, Coconut Oil together and then add Vegetable Oil. Cream together. Add Dixie Crystals Sugar and Eggs. Whip until light and fluffy. Add Milk.
- In a separate bowl combine Powdered Sugar, Baking Soda, Cream of Tartar, Salt, and Flour. Mix to combine.
- Add flour mixture a little at a time until fully incorporated. The dough will be soft but not sticky.
- Scoop dough using a medium-size #24 cookie scoop. Place 2 scoops, one on top of the other, on greased cookie sheet.
- Use the bottom of a Mason Jar or Glass drinking glass and press cookie dough. Dip into sugar and repeat on all cookies. This helps flatten cookies and make the signature cracked edges of the sugar cookie. It also gives each cookie a dusting of sugar for an added burst of flavor and texture
- Bake at 350 degrees for 8-9 minutes. Do not over bake. Cookies will be baked but no golden edges. Do Not Over Bake. Makes about 32 Large Cookies
Cream Cheese Frosting
In a mixing bowl combine cream cheese and powdered sugar using a hand mixer. Add Vanilla Extract and milk.
Preparing Fruit
Choose the fruit you want to use. I love a combination of fruit and berries. Wash fruit and cut into small bite size pieces for best results in placing on frosted sugar cookies.
Top each cookie with cream cheese frosting and add bite size pieces of fruit on top.

How to store and serve Fruit Pizza Cookies
Fruit Pizza Cookies should be stored in refrigerator and served chilled. I find it easiest to frost and top with fruit right before serving.

Fruit Pizza Cookies
Ingredients
- 1 Cup Butter - Softened
- ½ Cup Vegetable Oil
- ¼ Cup Coconut Oil
- 1 ¼ Cup Sugar
- ¾ Cup Powdered Sugar
- 2 Tablespoons Milk
- 2 Eggs - Large
- ½ teaspoon Baking Soda
- ½ teaspoon Cream of Tartar
- ¾ teaspoon Salt
- 5 ¼ Cup All Purpose Flour
Frosting
- 16 ounces Cream Cheese - softened
- 1 Cup Sugar
- 2 teaspoon Vanilla Extract
- 2-4 Tablespoons Milk - 2%

- Strawberries
- Mandarin Oranges
- Blueberries
- Pineapple
- Raspberries
- Kiwi
Instructions

- Allow cookies to cool on pan for 5 minutes before moving to cooling rack to cool completely.
Frosting
- In a separate bowl using a hand mixer combined 16 ounces Cream Cheese with 1 cup Sugar, 2 teaspoon vanilla and 2 to 4 Tablespoons Milk. Mix until smooth.
- Frost each cooled cookie and top cut fruit pieces

- Wash and cut fruit into bite size pieces. Place on top of frosted cookie.
