Adding a few extra ingredients and you can turn a classic cookie recipe into a cookie that will wow your taste buds with a combination of flavors and textures. To make Coconut Lime Swig Cookies use fresh Key Limes. The zest is fantastic and ads a little texture similar to coconut flakes. Pretty sneaky, right?

Cookie Ingredients
- Butter
- Vegetable Oil
- Coconut Oil
- Dixie Crystal Sugar
- Powdered Sugar
- Milk
- Eggs
- Baking Soda
- Cream of Tartar
- Salt
- All-Purpose Flour
- Key Lime Juice
- Key Lime Zest
Frosting Ingredients
- Butter
- Coconut Oil
- Powdered Sugar
- Coconut Extract
- Lime Zest
- Heavy Whipping Cream
- Lime Wedges
Dixie Crystals Sugar
I grew up being taught that Store Brands were less expensive and the same. As I’ve spent more and more time in the kitchen I’ve found that quality products make big differences and using Dixie Crystals Sugar is a new favorite find. This sugar is very fine and gives my recipes a burst of texture that I love.
Melissa’s Produce
I received a huge box of fresh produce including fruits and vegetables from Melissa's Produce. I live in a rural area that enjoys winter for many months. With short growing seasons finding quality fresh produce is difficult. I loved my box of produce and can’t wait to order more.
Key Limes made all the difference for this recipe. Key limes are small round limes with very thin peel. They are tart in flavor and less acidic than limes in general. When tasted the tart flavor was less subtle than other limes which is ideal for use in sweet recipes.
Believe it or not, Limes are a great source of Potassium and Magnesium which promote heart health. Potassium can lower blood pressure too. I guess that means these cookies are not only delicious but you get vitamins and minerals your body needs too.
How to make Coconut Lime Swig Sugar Cookies
For this recipe, I used my Bosch Universal Plus Mixer. You can read why I love my Bosch and have grown up using a Bosch Mixer. You can of course use a Hand Mixer. Make sure you whip your ingredients well if using a hand mixer for best results.
- Cream butter, Coconut Oil together and then add Vegetable Oil. Cream together. Add Dixie Crystals Sugar and Eggs. Whip until light and fluffy. Add Milk and Lime Juice.
- In a separate bowl combine Powdered Sugar, Baking Soda, Cream of Tartar, Salt, and Flour. Mix to combine.
- Add flour mixture a little at a time until fully incorporated. Add Lime Zest. The dough will be soft but not sticky.
- Scoop dough using a medium-size #24 cookie scoop. Place 2 scoops, one on top of the other) on greased cookie sheet.
- Use the bottom of a Mason Jar or Glass and press cookie dough. Dip into sugar and repeat on all cookies. This helps flatten cookies and make the signature cracked edges of the sugar cookie.
- Bake at 350 degrees for 8-9 minutes. Do not overbake. Cookies will be baked but no golden edges. Do Not Over Bake. Makes about 32 Large Cookies
Frosting
- In a bowl mix Softened Butter and Coconut Oil. Add Heavy Whipping Cream, Coconut Extract and Powdered Sugar and Mix until fluffy.
- Frost cooled cookies with a generous spread of frosting and garnish with a lime wedge or slice. Store cookies in a sealed container. Freeze for up to 3 months.

Coconut Lime Swig Cookies
Ingredients
Cookie Ingredients
- 1 Cup Butter - Softened
- ½ Cup Vegetable Oil
- ¼ Cup Coconut Oil
- 1 ¼ Cup Sugar - Dixie Crystals Sugar
- ¾ Cup Powdered Sugar
- 2 Tbs Milk
- 2 Eggs
- ½ teaspoon Baking Soda
- ½ teaspoon Cream of Tartar
- ¾ teaspoon Salt
- 5 ¼ Cup All Purpose Flour
- 2 Tbs Key Lime Zest - Melissas Produce
- 1 Tbs Lime Juice
Frosting
- ½ Cup Butter - Softened
- ½ Cup Coconut Oil
- 4 Cups Powdered Sugar
- ¼ Cup Heavy Whipping Cream
- 2 teaspoon Coconut Extract
- 1 Tbs Key Lime Zest
Garnish
- 8-10 Key Limes - Wedges or slices
Instructions
Cookie Directions

- Frost cooled cookies with a generous spread of frosting and garnish with a lime wedge or slice. Store cookies in a sealed container.
- Freeze for up to 3 months
Garnish
- Slice Key Limes for garnish.
- To Eat: Squeeze lime wedge or slice on cookie and enjoy
