Easy Key Lime Recipe
Is there a difference between a Key Lime and Limes? There most certainly is and it’s important to understand the difference. You can of course substitute one for the other but don’t expect the same results.
Key Limes have a thin peel. The flavor is less tart with almost a hint of sweet after taste while still keeping the tang you would expect from a lime. Key Limes are small and round, about an inch in diameter.

Key Limes are more tropical and can be harder to find depending on where you live. So if you can get your hands on some, definitely don’t let them go to waste. Making a No Bake Cheesecake is ideal. Creamy, Rich, and Delicious!
No Bake Cheesecake Ingredients

- Cream Cheese
- Heavy Whipping Cream
- Powdered Sugar
- Key Lime Juice
- Key Lime Zest
- Graham Crackers
- Sugar
- Butter
- Heavy Whipping Cream (Garnish)
- Key Lime slices *optional
Graham Cracker Crust for Cheesecake
For a 9inch Spring Form Pan use 11-12 rectangles of Graham Crackers. It’s easiest to crush graham crackers using a food processor. In a mixing bowl combine Graham Cracker Crumbs and Sugar. Melt butter and mix butter into crumb mixture until combined. Pour mixture into the bottom of a 9 inch Spring Form Pan. Using the back of a spoon press crumbs forming a layer in the bottom of the pan.
Key Lime Cheesecake How To
- In a large mixing bowl add 1 ½ cup Heavy Whipping Cream and whip using a hand mixer until stiff peaks form.
- Add ½ Cup Powdered Sugar and mix until combined. Set Aside
- In a separate large mixing bowl using a hand mixer combine softened cream cheese with ¾ cup powdered sugar, Key Lime Juice, and Zest. You can use the same beaters. Mixture will be thick and smooth.
- Add whipped Whipping Cream to cream cheese mixture and mix to combine. Carefully add Cheesecake mixture to Spring Form Pan with graham cracker crust. Using a rubber spatula to spread evenly in the pan.
- Refrigerate 4 hours or overnight before serving.
Garnish
It’s best to wait to garnish until after cheesecake has set and you are ready to serve. Whip Whipping Cream until stiff peaks form and then add powdered sugar and combine. Add dollops to top of cheesecake as garnish with a slices of lime.

How long does it take for my No-Bake Cheesecake to set?
Allow No Bake Cheesecakes to set in Refrigerator for a minimum of 4 hours. It can take anywhere from 4-8 hours. I find allowing cheesecake to set for 24 hours is best
What is a Springform Pan?
Springform pans come in a variety of sizes. It is bakeware that the sides can be removed from the base or bottom. This pan is ideal for easily removing the cheesecake from the pan.
Graham Cracker crusts can be placed on the bottom or wrapped up the sides of a Springform Pan. Adding a piece of parchment paper to the bottom also helps to lift the dessert off the bottom quick and easy.
Why is my No-Bake Cheesecake Not Firm?
There are a number of variables why your No-Bake Cheesecake may not be as firm as you like. Likely the whipping cream was not whipped long enough. You want very stiff peaks formed that hold their shape for this recipe. Adding whipping cream that hasn’t been fully whipped will leave your cheesecake loose.
What is the Difference between Baked and No-Bake Cheesecake?
The main difference between a Cheesecake and a No-Bake Cheesecake, is there are no eggs or oven baking time required. The cheesecake sets in the refrigerator after assembling all the ingredients. This also means this is a quick and easy recipe to follow.

Key Lime No Bake Cheesecake
Ingredients
- 8 oz Cream Cheese - softened
- 1 ½ Cup Heavy Whipping Cream
- 1 ¼ Cup Powdered Sugar - *Divided
- 2 Tbs Key Lime Juice
- 2 Tbs Key Lime Zest
Graham Cracker Crust
- 1 ½ Cup Graham Crackers Crumbs - 11-12 Graham Crackers Crushed
- ¼ Cup Dixie Crystal Sugar
- ½ Cup Melted Butter
Garnish
- 1 Cup Heavy Whipping Cream
- ¼ Cup Powdered Sugar
- 1 Tbs Key Lime Zest
- Key Limes - *Optional Sliced or Wedges
Instructions
Graham Cracker Crust
- In a mixing bowl combine Gram Cracker Crumbs and Sugar
- Melt Butter and mix butter into crumb mixture until combined
- Pour mixture into bottom of a 9 inch Spring Form Pan.
- Using the back of a spoon press crumbs forming a layer in the bottom of the pan.
- Place crust in refrigerator while preparing cheesecake
Key Lime No Bake Cheesecake
- In a large mixing bowl add 1 ½ cup Heavy Whipping Cream and whip using a hand mixer until stiff peaks form.
- Add ½ Cup Powdered Sugar and mix until combined.
- In a separate large mixing bowl using a hand mixer combine cream cheese with ¾ cup powdered sugar, Key Lime Juice and Zest. You can use the same beaters. Mixture will be thick and smooth.
- Add whipped Whipping Cream to cream cheese mixture and mix to combine.
- Carefully add Cheesecake mixture to Spring Form Pan. Using a rubber spatula to spread evenly in pan.
- Refrigerate 4 hours or overnight before serving.
Garnish
- In a large bowl using a hand mixer whip 1 cup whipping cream until stiff peaks form.
- Add ¼ cup Powdered Sugar and whip to combine.
- Place in large Zip-loc bag and snip corner off. Pipe Whipping Cream on to Cheesecake in dollops or spread evenly over top.
- Add Key Lime slices
Notes
- Whip Whipping Cream until Stiff Peaks form. This is very important and will give your cheesecake a rich thick texture.

Hi - this is the key lime recipe I was looking for. I really didn't want to use sweetened condensed milk, just powdered milk - I mean really why do we need both? I am going to use baked puff pastry shells since this is a no bake filling. I don't like the graham cracker crust. Thank you so much!
