    Frito Corn Salad is a tasty dish that’s going to liven up any fiesta themed meal. It would also make an incredible tailgate snack recipe that everyone can enjoy.

    With a few simple ingredients and 2 steps from start to finish, it’s about as easy as it gets!

    If you’ve never had a Frito salad, there’s no time like the present to try something new.

    With fresh cut bell peppers and onions, mixed with corn and cheddar cheese, this salad is great! 

    It’s deliciously creamy, chunky, and refreshing. A bit hard to describe, but once you try it, you’ll see what I mean.

    This Frito corn salad makes a great side dish to take to a pot luck or barbecue. With the flavors getting even better as it ages, mix it up a day in advance and add the chips just before serving. 

    This dish is perfect or those last minute parties where guests are asked to bring a dish.

    You don’t want to take the same thing as someone else, but you want to bring something everyone will love.

    What’s in Fritos Corn Salad?

    • 1 Can Yellow Kernel Sweet Corn
    • ½ Cup Red Bell Pepper
    • Half Cup Yellow or Orange Bell Pepper
    • ½ Cup Red Onion
    • ½ Cup Mayonnaise
    • ¼ Cup Sour Cream
    • 1 Cup Cheddar Cheese
    • 1 Tbs Taco Seasoning
    • 2 Cups Frito Chips

    How to Make Frito Corn Salad

    • In a bowl, mix together the corn, diced red pepper, yellow pepper, onion, mayonnaise, cheese and taco seasoning.
    • Add the Frito chips just before serving and enjoy.

    How to Store Frito Salad

    Store your Frito salad in a covered bowl in the fridge. If making your salad in advance, don’t add the chips until just before you’re ready to eat. This prevents them from getting soggy.

    How long will Corn Salad Last?

    Without the chips, your corn salad will last up to 3 days well covered in the fridge. With the chips it’s a matter of hours unless you like soggy and chewy chips. Having the chips fresh and crisp really adds to the texture of the dish though.

    What flavor of Frito Chip is best?

    The flavor of Frito chip that you choose is totally up to your own personal preference. You can use Plain, BBQ, or even Chili flavored Fritos.

    Honestly, I like the sweetness of the BBQ but the Chili flavor is also excellent. For the less adventurous, plain Fritos work great with this recipe.

    Quick Tip

    Add Frito Corn Chips right before serving so they don't get to soft.

    Don't hesitate to make this easy Frito Salad recipe and double it. It's delicious and will be gone before you know it.

    Don't have all the ingredients, that's okay! Substitute any color bell pepper for what you have. It's okay to use less too. This is really a salad that comes together with all these fresh ingredients!

    Ingredients

    • 1 can Yellow Kernel Sweet Corn
    • ½ cup Red Bell Pepper - diced
    • ½ cup Yellow or Orange Bell Pepper - diced
    • ½ cup Red Onion - diced
    • ½ cup Mayonnaise
    • ¼ cup Sour Cream
    • 1 cup Cheddar Cheese
    • 1 tablespoon Taco Seasoning
    • 2 cup Frito Chips

    Instructions

    • Mix corn, with diced red pepper, diced yellow pepper, diced red onion, mayonnaise, cheese and Taco Seasoning.
    • Add Frito Chips before serving.

    Optional:
    Add additional Taco Season to spice it up if desired!

      I made this salad for the first time for our 4th of July BBQ. I knew I would like it but was not sure if my husband would. Not only did I like it, but we both LOVED it. It was creamy and cold, the added flavor and crunch of the peppers were amazing and the fritos were a bonus. I believe in making a recipe exactly as written the 1st time to find out if we would even try it a 2nd time and I definitely will. The only change I might do is add a jalepeno pepper as well!! Excellent salad!!
