- 1 Can Yellow Kernel Sweet Corn
- ½ Cup Red Bell Pepper
- Half Cup Yellow or Orange Bell Pepper
- ½ Cup Red Onion
- ½ Cup Mayonnaise

- 1 Tbs Taco Seasoning

Without the chips, your corn salad will last up to 3 days well covered in the fridge. With the chips it’s a matter of hours unless you like soggy and chewy chips. Having the chips fresh and crisp really adds to the texture of the dish though.

The flavor of Frito chip that you choose is totally up to your own personal preference. You can use Plain, BBQ, or even Chili flavored Fritos.
Honestly, I like the sweetness of the BBQ but the Chili flavor is also excellent. For the less adventurous, plain Fritos work great with this recipe.

I made this salad for the first time for our 4th of July BBQ. I knew I would like it but was not sure if my husband would. Not only did I like it, but we both LOVED it. It was creamy and cold, the added flavor and crunch of the peppers were amazing and the fritos were a bonus. I believe in making a recipe exactly as written the 1st time to find out if we would even try it a 2nd time and I definitely will. The only change I might do is add a jalepeno pepper as well!! Excellent salad!!
