Crazy as it sounds, Caesar Salad is a family favorite but we are always left wanting more. So I threw in some pasta to this traditional recipe to give it a little more 'umph'.
Who knew it would be a hit so fast!
I recently had out of state guests and decided to make Chicken Caesar Pasta Salad for them.
I could see the hesitation and knew exactly what they were thinking. Pasta with a salad, really? My response to them and you is... TRY IT!

What's in Chicken Caesar Pasta Salad?
The ingredient list is simple, just as you would expect from a Caesar Salad Recipe:
- Cooked Chicken
- Romaine Lettuce
- Parmesan Cheese
- Croutons
- Pasta
- and of course, Caesar Salad Dressing


Chicken Caesar Pasta Salad without Lettuce
Of course you can leave out the Lettuce if you wish! That's what I love about being in the kitchen. Always, always make a recipe how you would like to eat it.

Pampered Chef makes a Seafood Caesar Pasta Salad with hard boiled eggs, crab meat, red onion, and bell peppers. It sounds delicious. Might need to give it a try!

How to make Chicken Caesar Pasta Salad
I love how easy this recipe is to make. So let's get started!
- 8oz Medium Shells Pasta with 3 cups Chicken Broth or water in the Pressure Cooker for 3 mins with 3 min Natural Release
- Rinse and Drain Pasta and place in refrigerator for 30 minutes.
- Season Chicken Breasts with Salt, Pepper, and Garlic and Herb Seasonings.
- Cook Chicken on Stove over Medium/High Heat using EVOO. OR Cook in Air Fryer at 350 degrees for 8 minutes per side or until reaches 165 degrees internal temperature.

Continued from above
- Rough Chop 1 head of Romaine Lettuce and place in a large bowl
- Add ½ Cup grated Parmesan Cheese
- 1 Cup Seasoned Croutons
- Cooked Cooled Pasta
- ¾ Cup Caesar Dressing

How to Cook Chicken with the CrispLid
It couldn't be easier to cook chicken breasts using the CrispLid by Mealthy. I like to slice my breasts in half horizontally so my chicken is about the same thickness all the way through.
This ensures even cooking and keeps everything moist and delicious.
Then I place the chicken breasts on the basket and place the CrispLid on top. Set to 350 degrees for 8 minutes per side.
And I have some of the most tender, moist and delicious chicken with ease.

How to Cook Chicken on the Stove
Of course for this recipe you can also cook your chicken on the stove. Over Medium to High heat, heat your frying pan.
Add some EVOO and your seasoned chicken breasts and allow to cook for 6-9 minutes per side depending on the thickness and size of the chicken breasts.
Turn over and allow to cook on the other side for an additional 6-9 minutes. Always check internal temperature of chicken to reach 165 degrees at the thickest part to ensure it's fully cooked.

How to Cook Pasta in the Pressure Cooker?
I love using a Pressure Cooker to cook pasta. Time will vary on type of pasta. For this recipe you will use 8oz of medium size shell pasta.
You will need 3 cups of Chicken Broth or Water. I prefer Chicken Broth because the noodles will become infused with additional flavor making this recipe even better.

Cook the Pasta for 3 minutes on Pressure Cook High. Allow a 3 minute Natural Release to reduce the starches inside the Pressure Cooker and then Quick Release the remaining pressure.
Rinse and Drain pasta and allow to cool. It's really that easy to cook Pasta in the Pressure Cooker.

Creamy Chicken Caesar Pasta Salad
Ingredients
- 2 Chicken Breasts
- 8 oz Pasta - Medium Shells
- 3 cups Chicken Broth or Water
- 1-2 tbs Garlic Herb Seasonings
- 1 Head Romaine Lettuce
- ½ cup Shredded Parmesan Cheese
- 1 cup Seasoned Croutons
- ¾ cup Caesar Salad Dressing
Instructions
- Place 8oz Medium Shells Pasta with 3 cups Chicken Broth or cold water in the Pressure Cooker for 3 mins with 3 min Natural Release.
- Rinse and Drain Pasta and place in refrigerator for 30 minutes.
- Slice Chicken Breasts horizontally to create 4 evenly sliced Chicken Breasts.
- Season Chicken Breasts with Salt, Pepper, and Garlic and Herb Seasonings.
- Cook the Chicken on Stove over Medium/High Heat using EVOO. OR Cook in Air Fryer at 350 degrees for 8 minutes per side or until reaches 165 degrees internal temperature.
- Allow to cool before cutting into bite size cubes.
- Roughly chop 1 head of Romaine Lettuce and place in a large mixing bowl.
- Add ½ cup grated Parmesan Cheese to bowl.
- Place 1 cup of Seasoned Croutons in bowl and add the cooked and cooled pasta to the bowl. Toss ingredients to combine.
- ¾ - 1 cup Caesar Dressing and toss to coat. Serve Immediately
Notes
- Store: This pasta salad is best enjoyed fresh. If you need to though, you can keep leftover chicken Caesar salad in a bowl covered with plastic wrap, or in an airtight container, in the refrigerator for up to 2 days.
- Freeze: You can always prepare the chicken in advance and freeze it in a freezer bag or freezer-safe container for up to 3 months. Defrost and reheat to add to a freshly made salad later on!
