What’s In Tuscan Chicken Pasta?
- 1 Lb Boneless Skinless Chicken Breasts
- 8oz Penne Pasta
- 1 ½ Cups Unsalted Chicken Broth
- One Cup Heavy Cream
- 1 teaspoon Garlic
- ⅓ Cup Sun Dried Tomatoes
- 1 Cup Fresh Spinach
- ½ Cup Onion
- ½ teaspoon Salt
- ¼ teaspoon Pepper
- 2 Tbs Dry Italian Dressing Seasoning
- 1 Cup Fresh Grated Parmesan Cheese
- 4oz Cream Cheese
- 2 Tbs Olive Oil

How to Make Tuscan Chicken
- Set your Instant Pot / Pressure Cooker to Saute mode and wait until it reads "Hot."
- Cube the chicken and then season it with Salt, Pepper, and Italian Seasonings
- Add in the Olive Oil and the Seasoned Cubed Chicken
- Saute the chicken until it’s until no longer pink
- Turn off the Instant Pot / Pressure cooker
- Add in the broth and then deglaze the bottom of the pot by scraping and lifting any stuck bits
- Add in the Pasta
- Pour the Heavy Cream on top. Do Not Stir
- Set the Instant Pot to Manual / Pressure Cook on high for 5 minutes with a 4 minute Natural Pressure Release
- Open the Lid and Stir in the pasta
- Add in the Cream Cheese and Sun-Dried Tomatoes on top of the pasta and then Stir
- Sprinkle the freshly grated Parmesan Cheese and stir
- Stir in the Spinach and allow it to sit for 1 minute
- Serve and Enjoy!

Ingredients
- 1 lb Chicken Breast

- ½ teaspoon Salt
- ¼ teaspoon Pepper
Instructions
- Set your Instant Pot Pressure Cooker to Sauté mode and wait until it reads "Hot."
- Add the Olive Oil and diced Onions, and sauté until tender.
- Cube the chicken and then season it with Salt, Pepper, and Italian Seasonings.

- Sauté the meat until it’s no longer pink.

Adding Salmon to this recipe would change the cooking times and process. Although I bet it would be delicious! I would recommend grilling your salmon and adding it to the cooked pasta at the end.

Just tried this recipe for dinner tonight...it was delicious! The chicken was tender, and I loved the sun-dried tomatoes. And I am so glad I didn’t skip the addition of spinach! I didn’t it would get tender at the end, but it did. Thanks Rebecca!
