    Lemon Oatmeal Bars always take me way back...way way back and I've carried this simple recipe forward to my boys.

    Sometimes you just need a simple recipe with few ingredients. Betty Crocker doesn't disappoint! But I also recommend these Peanut Butter Oatmeal Bars which are also a favorite treat and you might like too.

    Lemon Oatmeal Bars

    Making Oatmeal Cookies is always a treat. They are chewy and sweet with a little crisp bite. Yum.

    But what happens when we turn one of these Cookie Packages into a decantant dessert? Well let me tell you.

    YUM!

    You can fool just about everyone with this desert especially if you take the time to dress up the plate, serve with a chilled glass of milk.

    Just make sure you throw away the Oatmeal Cookie Package, okay?

    What's in Lemon Oatmeal Bars?

    • 1 pkg Oatmeal Cookie Mix
    • ½ Cup Butter
    • 1 Egg
    • Sweetened Condensed Milk
    • ¼ Cup Lemon Juice
    • 1 teaspoon Lemon Zest

    I like to use cold butter in this recipe and use a cheese grater to grate bits of butter into the Oatmeal mix. Trust me. Genius!

    How to make Lemon Oatmeal Bars?

    1. Use a large bowl and add cookie mix with cold grated butter.
    2. Mix with a fork to make crumbles
    3. But it doesn't hurt towards the end to get messy and use your hands
    4. With a fork add 1 egg and combine. The mixture will get a little sticky at this point but also crumbly too. It's a strange mixture, but it works.
    5. Spray an 8x8 or 9x9 glass pan with cooking spray and place half the cookie mixture in the bottom of the pan.
    6. Use a fork or your fingers to spread evenly to make a crust.
    7. Bake at 350 for 12 minutes.
    8. In a separate bowl combine sweetened condensed milk, lemon juice and lemon zest.
    9. With a spoon stir until fully combined. Mixture will be a thick pudding like consistency.
    10. Pour mixture over baked crust and crumble remaining cookie on top
    11. Bake for 22-24 minutes or until golden brown
    12. Allow to cool for at least 30 minutes before cutting.
    13. Store in refrigerator

    How to store Lemon Oat Bars

    Because this recipe has sweetened condensed milk, it's best to store in the refrigerator. Personally I love a cold Lemon Bar

    Can I double the batch?

    Of course you can, just double the ingredients of course! 😉

    Lemon Oatmeal Bars

    This is a recipe my mother would have me make growing up because it was a perfectly easy recipe that I couldn't mess up.

    Funny thing is, this is a recipe I started my own boys with. With few ingredients and even less to measure its a great recipe to teach a little.

    Plus, you can do it all by hand. No hand mixer involved.

    Lemon Oatmeal Bars have an oatmeal base with a lemon filling and then cookie crumble on top. The Flavors are perfectly blanaced.

    So go ahead and pour yourself a glass of milk and sneak a bar or two and enjoy!

    Lemon Oatmeal Bar

    Decadent and Delicious Lemon Oatmeal Bars made with Betty Crocker Oatmeal Cookie Mix. Mix by hand and a perfect recipe to teach the kids.

    Ingredients

    • 1 pkg Betty Crocker Oatmeal Cookie Mix
    • ½ Cup Butter
    • 1 Egg
    • 1 can 14 0z Sweetened Condensed Milk
    • 2 teaspoon Lemon Peel - Grated
    • ¼ Cup Lemon Juice

    Instructions

    • Heat Oven to 350 degrees
    • Cut Cold slices of butter into bowl with Oatmeal mixture and blend together with a fork or pastry cutter.
    • Mix in egg to Oatmeal and Butter mixture. Mixture will be crumbly
    • Press ½ of mixture into the bottom of an 8x8 sprayed pan. Bake for 10-12 mins
    • In a separate bowl mix lemon peel, lemon juice and sweetened condensed milk until combined.
    • Pour over baked oatmeal crust and layer the rest of the Crumble Oatmeal mixture on top
    • Bake for 22-25 minutes. Until golden brown. Let cool 30 minutes or longer. Store in refrigerator.
