    Easy Taco Stuffed Zucchini Boats

    Zucchini Taco Boats are a great low carb dish that brings healthy together with tasty fiesta inspired flavors.

    With these stuffed zucchini boats you’ll have a great dish packed with nutritional value.

    These taco stuffed zucchini boats are so incredible because they not only bring the taco flavors you want, but it’s done in a unique fashion.

    The little boats look so cute on a serving dish and in the summer or fall when these squash are priced low, this dish can be incredibly frugal as well!

    Eating healthy doesn’t have to be a horrible death sentence or change up from your normal meals. Making small changes or substitutions is a great place to start.

    Swapping out the corn tortilla shells for a nice zucchini taco boat is a small step towards healthier eating and one that doesn’t require much effort.

    Zucchini Boats

    What's in Zucchini Taco Boats?

    • 1 lb Lean Ground Turkey
    • Red Bell Pepper
    • Orange Bell Pepper
    • Yellow Onion
    • ½ Cup Corn
    • ½ Cup black Beans
    • ½ Cup Salsa
    • ¼ Cup Water
    • 1 teaspoon Garlic
    • ¼ teaspoon Salt
    • ¼ teaspoon Pepper
    • ½ Cup Shredded Cheese (Cheddar, Mozzarella, or Mexican Blend Cheese)
    • 2 Tbs Taco Seasoning
    • 3 Medium Zucchini
    • 1 Tbs Olive Oil
    Ground Turkey

    How to make Taco Zucchini taco Boats?

    • Place 1 cup of water or Broth in the Instant Pot
    • Place the ground turkey on a trivet inside of the Instant Pot
    • Set it to Manual High (Pressure Cook) for 5 minutes and do a quick release
    • Remove the cooked ground turkey and then discard any liquids in the pot. Clean or wipe out pot and then put it back in Instant Pot.
    • Set it to Saute' and then add the cooked turkey. With a wooden spoon chop up the meat
    • dice onion, garlic, and bell peppers and then stir
    • Add in the seasonings, salsa, and water and stir.
    • Add in the corn and the rinsed canned black beans. Saute and stir for 4-5 minutes until vegetables are tender.
    • Slice the zucchini in half horizontally
    • With a spoon remove some of the center flesh of zucchini creating a large cup to fill.
    • Sprinkle Salt and Pepper over Zucchini and drizzle 1 tbs Olive Oil
    • Place the Zucchini in a baking dish and roast for 15 mins at 400 degrees.
    • Remove from oven
    • Spoon the turkey mixture evenly into 6 zucchini boats
    • Bake at 350 for 5-6 minutes.
    • Top with cheese and serve.

    Yes, you can. You can make the taco meat filling in advance and keep it covered and stored inside of the fridge.

    Because you want to bake the zucchini for a while before adding the filling it doesn’t make sense to fill the zucchini in advance, just make the filling and leave it in a bowl or closed bag.

    How long with Stuffed Taco Zucchini Boats last?

    If you find yourself with leftovers you can either freeze them for a long storage solution or keep them covered in the fridge for up to a few days.

      If you ware watching carbs this is a must try recipe!!! It’s stupid easy to make and delicious! Doing a bell pepper boat is great as well but a bit messier this is such a delicious recipe!
