I’ve raised my boys making “Yummy Rice” which is a very simple rice pilaf, this recipe for Garlic Mushroom Rice Pilaf is a spin off from that recipe and a Rice Pilaf that I just LOVE!

Making Garlic Mushroom Rice Pilaf is so good served as a side dish and can be made in the Instant Pot, Pressure Cooker, on the Stove Top or even in a Rice Cooker.

Back in the day, when my boys were young I found they ate foods with clever names. Or better yet names that instantly made them remember what it was.
Hence “Yummy Rice”..haha.. A super simple rice pilaf that goes with almost anything.
Moving forward, I have taken those easy recipes and changed them up a bit to make a new recipe with great flavors. And guess what? It works!
My boys quickly adapted to the change, as long as I refer to it as “Yummy Rice”

When to serve Garlic Mushroom Rice Pilaf
Rice Pilaf can be served as a side dish to compliment many meals. I prefer this rice pilaf when cooking with beef as the flavors go so nicely together.
Wonderfully served with a grilled steak ,or even a roast!

How to cook Garlic Mushroom Rice Pilaf
Although the ingredient list is the same, some of the measurements will change depending on what method you use to prepare and cook your rice.
Instant Pot: Using an instant Pot will use less liquid. Typically a 1:1.25 ratio. The recipe below is written for Instant Pot.
Stove top: Making Rice on the stove is exactly how my mother and grandmother use to make it. It’s tried and true and works perfectly every time! Use a 1:2 ratio.
1 part rice to 2 cups liquid. Place your sauce pan on the stove and bring to a boil.
Once you’ve reached a full boil, place a lid on top, turn heat off and leave it for 25 minutes. DO NOT REMOVE THE LID.
The steam will escape and your rice will not be fully cooked.
Rice Cooker: One of my favorite ways to make rice because it’s a set it and forget it method. Place your rice 1:2 ratio in your Rice cooker and turn it on.
Walk away and make the rest of dinner. It’s just that easy.

Quick Tip:
Rinse and wash your rice. Why? Because Rice has a starchy film on it and washing that away is so much better. I like to rinse my rice 3 times.
Place rice in a bowl and fill with water, swish my fingers around and then drain.
Repeat this 2 more times but the final time make sure to rinse off all excess water. Then cook according to the directions of the method of choice.

Garlic Mushroom Rice Pilaf
Ingredients
- 2 Cups Rice
- ¼ Cup Butter
- 8 oz Diced Fresh Button Mushrooms
- 2 teaspoon crushed garlic
- 2 ½ cups Beef Broth
Instructions
- Instant Pot:
- Rinse and wash rice and place in your Instant Pot or Pressure Cooker
- Add Beef Broth, Diced Mushrooms, and garlic
- Place butter on top.
- Set Pressure Cooker to Rice for 12 minutes
- Allow a 10 minute natural release,
- Fluff rice with a fork or spoon and serve
- Stove Top
- In a sauce pan had 2 cups rice and 4 cups beef broth
- Add mushrooms and garlic.
- Place butter on top
- Bring to a boil over High Heat (9-10)
- After a full boil, turn heat off or to a low simmer and cover with lid
- DO NOT REMOVE LID until time is complete.
- Allow to steam for 20-25 minutes.
- Fluff with spoon or fork and serve with any meal
- Rice Cooker:
- Place washed/rinsed rice in Rice Cooker. Add 4 cups Beef Broth, add mushrooms, garlic and butter.
- Close lid and turn on. The rice cooker will do the rest!
