Roasted Sweet Potato and Apples Ingredients

- Sweet Potatoes
- Apples
- Pecans
- Craisins
- Cinnamon
- Olive Oil
- Maple Syrup
Directions ~ How to Roast
- For this recipe I like to mix Olive Oil with Cinnamon and Maple Syrup in a small bowl and set aside. Then I prefer to wash and peel my Sweet Potatoes. However, feel free to leave the skins on, it adds nutritional value.

- With a sharpe knife, slice rounds about ¾ inch thick. Then slice each round into 6-8 wedges. I find a smaller wedge works perfectly in this recipe so the Apples don't over cook.

- Peel and core apple. Although you can leave the peels on if you prefer. It actually helps keep the apple from breaking down. It's your choice.
- I like to slice each wedge into 2-3 pieces. I like BIG apple chunks. This is to ensure the apple can hold it's shape better while the Sweet Potatoes are cooking.

- Now, Preheat the oven to 400 Degrees
- Toss Sweet Potatoes wedges and Apple Slices into olive oil mixture until well coated.

- Add Pecans and Craisins. Toss to coat
- Bake at 400 Degrees for 22-25 minutes or until desired texture is achieved
- Serve Hot
