    Roasted Sweet Potato and Apples just like Grandma used to make are super simple to make. So simple in fact, you will scratch your head thinking surely there is more to it. Trust me, it's just an easy recipe to make the best Roasted Sweet Potatoes and Apples you've ever had.

    Sweet Potato and Apples

    Roasting veggies is my new favorite side dish. Let me help you see why it's a must! When you roast a veggie all the natural flavors come out which means you need very little seasoning to enhance the flavor natural flavors. It's a no brianer with out easy it is to Roast Veggies in your oven. So next time you wonder "What should I serve with Dinner?", let me tell you.. Roast some Veggies.

    Okay, I'll go one step further, How about Roasted Green Beans with Almonds, or Honey Roasted Carrots? Those are both Delish! But you may also enjoy Oven Roasted Broccoli too!

    Sweet Potato and Apples

    Each of these recipes are quick and simple. So take a few minutes to prep the ingredients and add to your delicious dinner! You won't be sorry.

    Roasted Sweet Potato and Apples Ingredients

    Sweet Potato and Apples Ingredients
    • Sweet Potatoes
    • Apples
    • Pecans
    • Craisins
    • Cinnamon
    • Olive Oil
    • Maple Syrup

    Directions ~ How to Roast

    • For this recipe I like to mix Olive Oil with Cinnamon and Maple Syrup in a small bowl and set aside. Then I prefer to wash and peel my Sweet Potatoes. However, feel free to leave the skins on, it adds nutritional value.
    How to Peel Sweet Potatoe
    • With a sharpe knife, slice rounds about ¾ inch thick. Then slice each round into 6-8 wedges. I find a smaller wedge works perfectly in this recipe so the Apples don't over cook.
    How to Cube Sweet Potatoe
    • Peel and core apple. Although you can leave the peels on if you prefer. It actually helps keep the apple from breaking down. It's your choice.
    • I like to slice each wedge into 2-3 pieces. I like BIG apple chunks. This is to ensure the apple can hold it's shape better while the Sweet Potatoes are cooking.
    Sliced Apples
    • Now, Preheat the oven to 400 Degrees
    • Toss Sweet Potatoes wedges and Apple Slices into olive oil mixture until well coated.

    • Add Pecans and Craisins. Toss to coat
    • Bake at 400 Degrees for 22-25 minutes or until desired texture is achieved
    • Serve Hot

    How to Roast Sweet Potato and Apples

    I prefer to use a large cookie sheet with parchment paper. You can also spray cookie sheet with cooking spray so your roasted veggies don't stick. Bake at 400 degrees for 22-25 minutes or until desired texture is achieved.

    How long to Roast Sweet Potatoes and Apples?

    I find when I cut Sweet Potatoes in rounds about ¾ inch thick and then slice each round into 6 wedges they are the perfect bite size wedge and the larger apple chunks don't lose their shape.

    How to Roast Sweet Potatoes in the Oven

    Use a Cookie Sheet Lined with Parchment paper making sure Sweet Potatoes are a single thickness layer. Spread evenly on pan for a more even cooking process.

    How to Store Roasted Sweet Potatoes and Apples

    This recipe is best served hot from the oven. Leftovers can be stored in an airtight container for up to 7 days.

    Can I Freeze Roasted Sweet Potatoes and Apples

    I do not recommend freezing leftovers. This recipe can be cut in half if needed for smaller gatherings.

    Sweet Potato Fun Facts:

    Sweet potatoes are high in beta carotene, vitamins E and C, iron, potassium and vitamin B-6. So eat up! It's a good veggie to enjoy. And Sweet Potatoes and Yams are 2 different vegetables. Although many refer to them interchangeable.

    What Temperature is Best for Roasting Vegetables?

    The perfect temperature– 400 degrees Fahrenheit is the perfect temperature for most roasted vegetables. It allows for a crispy, perfectly browned exterior and a fork tender interior. But it will vary based on the types of veggies and oil used. If your veggies are not browning enough, try increasing the temperature.

    Of course different Vegetables will Roast in different times depending on size and density. Regardless, roasted vegetables are super simple to make and delicious!

    Ingredients

    • 2 Sweet Potatoes
    • 2 Granny Smith Apples
    • ⅓ Cup Pecan Pieces
    • ¼ Cup Dried Cranberries
    • 1 teaspoon Cinnamon
    • 2 Tbs Olive Oil
    • 2 Tbs Maple Syrup

    Instructions

    • Preheat Oven to 400 Degrees
    • In a small bowl combine Olive Oil, Maple Syrup and Cinnamon. Stir to combine. Set aside
    • Wash and Peel Sweet Potatoes

    • Serve Hot

    Notes

    Cut Sweet Potatoes in ¾ inch rounds.  Cut each round into 6-8 wedges.  Sweet Potatoes are a hard dense vegetable.  Smaller wedges will cook more evenly.  
    Slice each Apple into 2-3 larger chunks.  You can choose to peel apples or leave peels on.  It's personal preference.
