Ingredients
- Tomatillos (about 3-4 medium-sized, husked and rinsed)

- Cilantro (¼ cup, chopped)

- Lime (1, juiced)
- For that extra zing that ties all the flavors together.
- Garlic (2 cloves)

- Green Onions (1 Bunch)
- Diced Green Onions adds a deep rich flavor to these quick and easy salsa
- Diced Green Chilies (4 ounce can)
- You choose the heat level. Diced Green Chilies add a depth of flavor
- Salt (to taste)
- A pinch or two will bring all the flavors into harmony.
- Sugar (to taste)
- A little bit of sugar goes a long way for a sweet savory salsa
- Jalapeño Peppers (or other chili peppers) (1, depending on heat preference)

How to make Tomatillo Salsa
- Prep the Tomatillos
- Husk and rinse your tomatillos under cool water to get rid of any sticky residue.
- Roast (or Boil) the Tomatillos (optional)
- Option 1: For a smoky flavor, throw your tomatillos on a hot grill or in a skillet and roast them for about 10 minutes, turning them until they're charred and soft.
- Option 2: Alternatively, you can just boil them for about 5 minutes until they soften. Roasting gives it a little extra oomph, though!
- Blend It Up
- Add the tomatillos, chilies, garlic, and green onions to your blender or food processor. Pulse until everything is finely chopped but still a little chunky you do not want big chunks of tomatillo in the salsa. You want texture, not a puree!
- Add Freshness
- Toss in the cilantro and lime juice. Pulse again to incorporate, but don’t overdo it—keep some of that lovely green texture. Taste and adjust the seasoning with salt as needed.
- Serve and Enjoy!

Tomatillo Salsa or Salsa de Tomatillo
Ingredients
- 3-4 Tomatillos - remove outer husk
- 1 4oz Diced Green Chilies - canned/ Medium, Mild, or Hot
- 1 bunch Green Onions - diced
- 3 Tablespoon Cilantro - Fresh chopped
- 2 teaspoon Sugar
- ¾ teaspoon Ground Cumin
- ¼ teaspoon Salt
- ¼ teaspoon Pepper
- 1 Jalapeno - Diced (optional)
Instructions
- Remove husks from Tomatillos and wash
- Cut Tomatillo's into 3-4 chunks and place in food processor
- Add remaining ingredients to food processor and pulse. Allowing food processor to break down ingredients until desired consistency.
- Serve over Sweet Corn Cakes
