We've all had a Lemon Poppy Seed Muffin. They are sold everywhere. But making them at home is so quick and easy that you will never purchase a store bought muffin again, I promise.
Adding Lemon Zest to the muffin batter makes a world of difference. The tart zesty flavor that it adds is ah-ma-zing and when paired with the tart lemon glaze you will love love this recipe.
I love how simple this recipe is to throw together. It's a great recipe to make with the kids and help them become more familiar in the kitchen. It's very forgiving and you will have beautiful and delicious Lemon Muffins.
How to make Zucchini Muffins
This is a nice small from scratch recipe. By that I mean it will make 6 Jumbo Muffins, 12 Regular-sized muffins, or about 24 mini muffins. One pan to bake and you are done. Of course, you can double this batch with no problem.

Regular Muffins | 15-18 Minutes |
Jumbo Muffins | 20-24 Minutes |
Baking times vary depending on size of muffin pans used but the temperature will all stay the same. Make sure to Preheat Oven to 375 degrees. Fill muffin tins ½ way full.
Step 1: In a large bowl combine dry ingredients (All-Purpose Flour, Sugar, Baking Powder, Poppy Seeds, and Lemon Zest) and mix together with a spoon.
Step 2: Make a well in the center of the dry ingredients and add Egg, Milk, Vegetable Oil, and Lemon Juice.
Step 3: Use a Fork or Spoon and mix wet ingredients into dry ingredients just until combined. Do not over-mix.
Step 4: Spray Muffin Tins with Cooking Spray or use Paper Baking Liner and fill ½ way full
Step 5: Bake for allotted time. Allow Muffins to cool before serving.
Step 6: (Optional Glaze) In a bowl combine 1 ½ cups Powdered Sugar, 2 Tbls Lemon Juice, and 1 Tbl Lemon Zest.
Step 7: Drizzle Glaze over warm muffins

- ¾ Cup Sugar - Dixie Crystals Sugar
- 2 teaspoon Baking Powder
- ½ teaspoon Salt
- 1 Tbl Poppy Seeds
- 1 Tbl Lemon Zest
- 2 Tbl Lemon Juice
- 1 Egg
- ½ Cup Milk
- ⅓ Cup Vegetable Oil
- 1 ½ Cup Powdered Sugar
- 1 Tbl Lemon Zest
- 2 Tbl Lemon Juice
- 2 Tbl Butter - Softened
- Preheat Oven to 375 Degrees
- In a bowl combine dry ingredients and mix. (Flour, Sugar, Baking Powder, Salt, Poppy Seeds and Lemon Zest)
- Add Milk, Vegetable Oil, Egg, and Lemon Juice to dry ingredients
- With a spoon, mix ingredients together until just combined. Do Not Overmix
- Spray Muffin Tin or use paper liners. Recipe will make 6 Jumbo Muffins, 12 Regular Muffins, or about 24 Mini Muffins
- Fill muffin tins ½ way full.
- Bake Jumbo Muffins: 20-24 MinsRegular Muffins: 15-18 MinsMini Muffins: 9-12 Minutes
- In a separate bowl combine combine softened butter, powdered sugar, lemon zest and lemon juice.
- Using a spoon, mix ingredients until combined
- Drizzle over warm muffins and allow to cool.
