    Coffee Cake Muffins are a sweet cinnamon and brown sugar streusel muffin that everyone loves. I may not drink Coffee but I have always loved any recipe with the name Coffee Cake in the title. Do you agree? Hot and fresh out of the oven is my favorite, but I won't ever turn one down either.

    Coffee Cake Muffins

    This recipe is a cross between my Muffin Recipe and Betty Crocker Coffee Cake Recipe from the 1970's. It has a lot of love behind it.

    This recipe will show you how to make a Jumbo Muffin but I'll also give you baking directions for regular muffins and mini muffins too!

    Coffee Cakes were thought to have originated in Germany. They were more like a sweet bread than a cake. It wasn't until 1857 that the term "Coffee Cake" became common.

    Coffee Cake Muffins

    If you've made my Fresh Blueberry Muffins or my Sweet and Tart Raspberry Muffins then you know how simple it can be to make a muffin from scratch. This Coffee Cake Muffin Recipe is no different.

    Coffee Cake Muffin Recipe Ingredients

    Muffin Ingredients
    • All Purpose Flour
    • Sugar
    • Salt
    • Baking Powder
    • Egg
    • Vegetable Oil
    • Milk
    • Vanilla

    Streusel Topping

    • Brown Sugar
    • Flour
    • Cinnamon
    • Butter

    Glaze (optional)

    • Butter
    • Vanilla Extract
    • Milk
    • Powdered Sugar

    How to make Coffee Cake Muffins

    How to make Muffins Steps

    Preheat Oven to 375 Degrees

    In a large glass mixing bowl, I love to use Pyrex, combine dry ingredients. Flour, Sugar, Salt, and Baking Powder. Stir to combine.

    Create a well in the dry ingredients and add an Egg, Vanilla, Vegetable Oil and Milk. Then with a fork or whisk beat egg into liquid gradually adding flour mixture until all combined.

    In a separate smaller bowl combine Brown Sugar, Cinnamon and flour. Mix to combine. Then add 1 Tbs melted Butter. Mix to combine. Streusel mixture will be crumbly.

    Coffee Cake Muffins Steps

    Spray Muffin Tin or use Muffin Liners and fill half way. Sprinkle 1 teaspoon of streusel mixture into batter and top each muffin with more batter. Then sprinkle more streusel on top of each muffin before baking.

    Bake at 375 Degrees for 20-24 minutes for large Jumbo Muffins.

    Optional Glaze: In a bowl combine Powdered Sugar and 1 Tbs softened butter. With the back of the fork mash butter into sugar to disburse as evenly as possible. Add Vanilla Extract and Milk and mix to combine. Drizzle glaze over warm muffins

    Baking Times For Muffins

    Muffins bake at 375 degree preheated oven for the following times. Pans should be sprayed with cooking spray or use muffin liners.

    As these muffins are naturally sweet, the glaze is purely optional but even a little goes a long way!

    Coffee Cake Muffins

    Ingredients

    • 1 ½ Cup All Purpose Flour
    • ¾ Cup Sugar
    • 2 teaspoon Baking Powder
    • ½ teaspoon Salt
    • 1 Egg
    • ⅓ Cup Vegetable Oil
    • ½ Cup Milk
    • 1 ½ teaspoon Vanilla

    Streusel Topping

    • ¼ Cup Brown Sugar
    • 1 teaspoon Cinnamon
    • 1 Tbs All Purpose Flour
    • 1 Tbs Butter - Melted

    Glaze (optional)

    • 1 Cup Powdered Sugar
    • 2 Tbs Butter - Softened
    • ½ teaspoon Vanilla Extract
    • 1-2 Tbs Milk

    Instructions

    • Preheat Oven to 375 Degrees
    • In a large mixing bowl combine dry ingredients. Flour, Sugar, Baking Powder, Salt. Mix to combine.
    • Make a well in the center of the dry ingredients. Crack egg into well, add Vanilla Extract, Milk and Vegetable Oil.
    • Using a Fork or Whisk, mix egg into milk, oil and vanilla gradually mixing in dry ingredients until fully combined.
    • Spray Jumbo Large Muffin Tin with Cooking Spray or use paper liners and fill each ½ way
    • In a separate bowl combine Brown Sugar, Flour and Cinnamon. Mix to combine
    • Add Melted Butter and mix. Streusel will be coarse crumble for topping.
    • Add about 1 teaspoon of Streusel to each muffin then top each muffin with remaining batter.
    • Sprinkle Streusel on top of each muffin before baking
    • Bake at 375 Degrees for 20-24 Minutes or until toothpick comes out clean

    Glaze (optional)

    • In a bowl add Powdered Sugar and Softened Butter. Use a fork to mash butter into Powdered Sugar.
    • Add Vanilla and Milk a little at a time until desired consistency is reached.
    • Drizzle glaze on warm muffins before serving.

      I make jumbo muffins for my husband to take to work for his coffee break. He is raving about these. I substituted melted coconut oil for the vegetable oil, followed everything else exactly.
      They're very good with coffee or hot tea. They freeze beautifully.
