There are many ways to celebrate the Holidays and of course Christmas. Some of my earliest memories were watching my mother bake an array of cookies to make plates for the neighbors. Would you believe we would even carol at their doors! It's a fun memory.
Some of my favorite Holiday cookies are Snowman Cookies, Reindeer Cookies, and even Grinch Cookies too. And the kids always go crazy for them.
Meltaway Cookies are a simple cookie recipe make with flour and cornstarch and of course creamed butter. Adding Peppermint extract adds that perfect Christmas touch.
Shopping List for Christmas Cookies
Butter, Sugar, Flour are all pantry ingredients. There are a couple of special ingredients you may not have on hand.
- Cornstarch
- Peppermint Extract
- Powdered Sugar
- Candy Canes
- White Chocolate: Chips or bars
How to make Meltaway Cookies
This recipe requires room temperature butter. Allow to sit on counter for at least an hour before making cookie dough. A stand mixer or hand mixer will work when making these fun and easy cookies. Make sure to preheat oven to 350.
In a large bowl cream butter and sugar together until light and fluffy. Add a teaspoon peppermint extract and mix together. In a small bowl combine flour and cornstarch. Gradually add dry ingredients to butter mixture.
Chill cookie dough in refrigerator making sure to cover with plastic wrap. This helps to keep the cookies from spreading to quickly during the baking.
Using a small cookie scoop, scoop cookie dough and place on cookie sheet to bake. Bake until light brown around the edges and move baked cookies to a cooling rack. Allow cookies to fully cool before frosting.
Making the frosting is quick and simple. Melt white chocolate in a small bowl in the microwave for about 30 seconds. Stir until smooth.
Cream Butter with Powdered Sugar until fluffy. Add Peppermint Extract and milk and combine until smooth. Adding a few drops of red food coloring is a fun optional addition.
Carefully add melted white chocolate to frosting mixture and whip together. Cookies should cool completely before being frosted and topped with crushed candy cane or peppermint candies.

Have you ever been to a Cookie Exchange? It's where everyone brings 2-3 dozen cookies and you go home with a couple of everyone's cookies. Easy to make multiple plates of cookies and you only made 1 cookie recipe. They are so fun!
Gather your neighbors and friends and schedule a Saturday morning to gather, it's really fun.

Can you freeze Meltaway Cookies?
Freezing Cookies is easily done. Place frosted cookies in an airtight container and freeze for up to 3 months.
What does Chilling Cookie Dough Do?
Chilling cookie dough helps to solidify the butter in this recipe. When cookies bake the solidified butter takes longer to melt and keeps the cookies from spreading. The longer the cookies are chilled the longer it takes for the cookies to spread when baking.

Peppermint Meltaways
Ingredients
- 1 Cup Butter
- ½ Cup Powdered Sugar
- 1 teaspoon Peppermint Extract
- 1 ¼ Cup Flour
- ½ Cup Cornstarch
Frosting
- ½ Cup Butter
- 3 ounces White Chocolate
- 2 Tablespoon Milk
- ½ teaspoon Peppermint Extract
- 1 ½ Cup Powdered Sugar
- Red Food Coloring - Optional
- Candy Canes or Peppermint Disks
Instructions
- In a large bowl cream butter and sugar together until light and fluffy. Add a teaspoon peppermint extract and mix together.
- In a small bowl combine flour and cornstarch. Gradually add dry ingredients to butter mixture.
- Chill cookie dough for 30 minutes to 1 hour in refrigerator making sure to cover with plastic wrap.
- Using a small cookie scoop, scoop cookie dough and place on cookie sheet to bake.
- Bake at 350 degrees for 9-11 minutes or until light brown around the edges.
- Allow cookies to cool on baking sheet for a couple minutes before moving to cooling rack
Frosting
- In a small bowl melt white chocolate in microwave for 30 seconds and stir until smooth. If additional time is needed heat for 15 seconds and stir.
- In a separate bowl cream butter and powdered sugar until smooth.
- Add milk and peppermint extract and cream together. Add red food coloring if desired
- Mix in melted white chocolate.
- Frost Cookies and sprinkle with crushed peppermint for garnish.
