I love Sweet Potato Fries for their crispy outsides and soft and tender insides. A Baked Sweet Potato provides all that yummy tender soft flesh inside that everyone loves.
Don't assume that cooking a Sweet Potato is the same as a Russet Baked Potato. The cooking times are vastly different but the great news is that you can use a 6 qt, 8qt or larger using the same cooking times. You will only need to add additional water for the larger size pots.
There are many factors to consider when setting the best time for the sweet potatoes you are cooking. And I'm here to let you know that Not All Sweet Potatoes are created equal. But, don't worry because I'm going to help you to find success.

Shopping List for Instant Pot Sweet Potato
You will need Sweet Potatoes. Try to choose sweet potatoes that are similar in size. The length doesn't matter as much as the width or thickness does. The thicker or wider the sweet potato the longer the processing time. Then you need a little olive oil, and salt.
Toppings are a whole other story that I'll address down below. Let's focus on cooking time for the perfect soft and creamy Sweet Potato
Measure sweet potatoes by the width or thickness around. Choosing similar sized sweet potatoes will make cooking time more even, I promise.

2 inch width | 15 minute |
3-4 inch width | 35 minute |
4+ inch width | 60 minute |
Regardless of the size of sweet potato allow a 12+ minute Natural Pressure Release. You can test a cooked Sweet Potato by inserting a fork or knife into the center. It should be soft and easily poked.
How to Cook Instant Pot Sweet Potatoes
Add 1 Cup water to a 6qt Instant Pot, 8 ½ Cups water to an 8qt and place a trivet in the bottom of the pot. Wash Sweet Potatoes and poke with a fork. You can rub in Olive Oil and add kosher salt to the skins if you wish.

Place on trivet and choose process time according to table above. There isn't any harm in over cooking except that they will typically burst open. Always set the time based on the largest sweet potato in the pot and keep in mind that sometimes you can have a wide and fat sweet potato.
Choose the higher processing time when a potato is both wide and fat as they will take more time to cook.
How to Top Sweet Potatoes
There are so many options from a simple Butter to almost dessert like with brown sugar and marshmallows. I personally enjoy some whipped butter with pecans, Craisins and some maple syrup drizzled on top. Just enough sweet and crunchy texture for a delicious bite each and every time.

Instant Pot Sweet Potato
Ingredients
- 2-4 Sweet Potatoes
- 1 Tablespoon Olive Oil
- Salt
- 1 Cup Water
Instructions
- Add water to the bottom of the Instant Pot. 1 Cup for a 6qt, 1 ½ Cups for an 8 qt. Place trivet on top
- Wash Sweet Potatoes and Poke with a fork.
- Rub skins with Olive Oil and season with salt. Place Sweet Potatoes in Instant Pot
- Pressure Cook on High. Small (2 inch width) 15 Minutes. Medium (3-4 inch width) 35 Minutes. Large (4+ inch width) 60 Minutes.
- Allow a 12 minute Natural Pressure Release
- Carefully remove hot sweet potatoes. Poke with a fork or knife to check if done. Sweet Potato should be soft and easy to poke. If Additional time is needed add a few extra minutes.
Toppings (optional)
- Whipped Butter, Salt and Pepper
- Whipped Butter, Brown Sugar and Marshmallows. Toast in oven using Broiler until golden brown
- Whipped Butter, Pecans, Craisins, and Maple Syrup
- Sour Cream, Chives, Salt and Pepper
- Blue Cheese, Walnuts and Honey
- Brown Sugar, Cinnamon, and Butter
