What is the first food you smell walking into a Fall Fair? I bet it’s the smell of hot cinnamon and sugar Churros! They are a favorite and for good reason. So why not Churro Cookies, a cinnamon sugar cookie topped with a delicious cinnamon and brown sugar frosting. It’s a fantastic combination and so good.

I love Cinnamon and Sugar combinations, which is why Snickerdoodle cookies are always a favorite in my home. In the Fall I even make a Pumpkin Snickerdoodle cookies because, why not! They are so good. But when you have a craving for the flavors of a Churro, then Churro Cookies or Churro Cupcakes to the rescue with these fun sweet treats.
In fact, Disney World debuted a fun Fall Mickey Churro Cookie that’s delicious, so with a little help this recipe is a true Copycat recipe. Mickey ears and all in the famous swirl. For you Disney lovers, this is a must make cookie!

Shopping List
Make sure your pantry is well stocked with Flour, Sugar, Cinnamon, Baking Powder, Salt, Eggs, Butter, and Vanilla Extract. This recipe also calls for Almond Extract and Heavy Whipping Cream which you might need to pick up at the store. I love when I have most of the ingredients
How to make Churro Cookies
Gather all the ingredients and weigh ingredients like flour, and sugar. If you don’t have a kitchen scale, then make sure to lift flour by the spoonful and gently fill a measuring cup making sure to scrape the top level. Adding too much flour will make cookies dry.
I prefer using my Bosch Universal Mixer to mix cookie dough. This recipe could also be made using a hand mixer too.
Cream softened butter and sugar until light and fluffy. Gradually add egg and extracts and continue to whip together. Slowly add dry ingredients making sure everything gets combined. Chill cookie dough for 30-60 minutes.

Sprinkle counter or work surface with flour and roll dough to ¼inch thick. Cut circles or Mickey Mouse Ears using cookie cutter and carefully place on cookie sheet allowing space between cookies.
Bake at 350 degrees for 7-9 minutes or until edges are slightly golden in color. Allow to cool on cookie sheet for a few minutes before moving to cooling rack. Allow cookies to fully cool before frosting.
Frosting Churro Cookies
In a large bowl combine softened butter, powdered sugar, brown sugar, and cinnamon. Mix until smooth. Slowly add vanilla extract and heavy cream. Frosting should be thick with stiff peaks.
Place frosting into a large zip-loc bag and snip corner. Pipe frosting in a swirl onto cooled cookies and top with a cinnamon and sugar mixture. Mickey Mouse shaped cookies can also have a swirl frosting. Include ears in the swirl pattern too.

Every year Disney World and Disneyland will debut festive Fall desserts and treats and it’s always fun to see what they come up with. I love the simplicity of this cookie paying tribute to Mickey Mouse with the silhouette shape and allowing the natural flavors of the cookie shine through in this classic Churro flavor recipe.
How to Store Churro Cookies
These cookies are fun to enjoy fresh and enjoy some later. Allow frosting to set and carefully store in sealed container. Place parchment paper in between cookies when stacking on top of each other.
Can I Freeze Cookies?
Freeze Cookies in a sealed container with parchment paper in between to prevent sticking together for up to 3 months. Allow to thaw on counter before serving.

What is a Churro?
Churros are a fried dough that is rolled in cinnamon and sugar. They originated in Spain and Portugal and have become a favorite in theme parks and Fall parties and events.

These cookies are similar to Crumbl Churro Cookie but more of a true Disney World Copycat Recipe if you ask me. Regardless, they won't last long because they are just so delicious, you will definitely want more.
Dixie Crystals Sugar
I grew up being taught that Store Brands were less expensive and the same. As I’ve spent more and more time in the kitchen I’ve found that quality products make big differences and using Dixie Crystals Sugar is a new favorite find. This sugar is very fine and gives my recipes a burst of texture that I love. In this recipe I used both granulated sugar as well as brown sugar from Dixie Crystals.
