In a large mixing bowl or use a stand mixer combine butter and sugar and cream together until light and fluffy
Add egg, vanilla extract and almond extract and cream
Gradually add dry ingredients of flour, baking power, salt and cinnamon and mix until combined.
Chill for 30 minutes
Sprinkle flour on work surface and roll cookie dough to ¼ inch. Using cookie cutters cut cookies and carefully place on greased cookie sheet.
Bake at 350F Degrees for 7-9 Minutes or until golden on edges
Allow to cool for 5 minutes before moving to cooling rack. Cool completely before frostin
Churro Frosting
In a separate bowl cream butter and powdered sugar. Whip until smooth.
Add brown sugar, and mix until smooth
Add vanilla extract and Heavy whipping cream a little at a time.
Frosting should be thick and hold stiff peaks
Place frosting in zip-loc bag and snip corner to pipe frosting onto cooled cookies
Sprinkle frosting with Cinnamon Bursts or Cinnamon Sugar Mixture
Allow to set. Serve and enjoy.
Notes
Top with Cinnamon Sugar or Cinnamon BurstCinnamon Sugar mixture is 3-4 Tablespoons Sugar and ½ teaspoon cinnamon. Add more cinnamon if a more rich deep flavor is wanted.
