Making Berry Turnovers is easy when you have puff pastry from Pepperidge Farm and I've got a delicious and easy blueberry filling recipe for turnovers. It's a small batch so you won't have any leftovers and you can make 8 turnover pastry treats.
I've always loved fresh blueberry recipes each bite holds a burst of flavor. Make sure to check out my Blueberry Muffins recipe or even my Fruit Pizza Cookies where I use big plump blueberries.

A Turnover is just a hand pie where the dough is folded over onto itself. The shape doesn't matter but I do love the nice triangle that is formed when using puff pastry.
Shopping List for Pepperidge Farm Blueberry Turnovers
Pastry: Puff Pastry
Fruit: Fresh Blueberries. Canned could be used in a pinch
Glaze: Powdered Sugar, Vanilla, and milk
How to make Blueberry Turnover Recipe
Puff Pastry typically comes frozen. Allow pastry to sit on counter to thaw completely. This can take an hour or so.
Sprinkle a little flour or sugar onto the work surface and place 1 room temperature pastry sheet, carefully unfolding. Using a rolling pin gently press and roll dough. This is a quick and easy rolling process to even the edges forming a square.

Slice puff pastry using a knife or pizza cutter. Cut sheet into 4 equal parts by cutting dough in half lengthwise and then cutting again across the middle.
Easy Blueberry Recipe for Filling
Wash fresh fruit and remove any mushy or rotten fruit before beginning. In a small saucepan add water, cornstarch, sugar and freshly washed berries. Frozen Blueberries can be used as a substitution.
Heat over medium / high heat stirring as needed. As mixture begins to boil continue to stir and scrape bottom of saucepan. Once sauce reaches desired consistency remove from heat. Break open a few blueberries which turns sauce a beautiful deep purple color leaving most of the berries whole.
Place 1-2 heaping tablespoons pie filling on each square of puff pastry. Use an egg wash on the edges and fold over pastry forming a triangle.
Using a fork to press seams together and seal edges each turnover. Place on parchment paper lined baking sheet. Brush a light egg wash over turnover and Bake at 400 Degrees until golden brown.
Make a simple glaze using Powdered Sugar, Vanilla Extract and milk in a small bowl to drizzle over cooled turnovers. Or serve topped with ice cream.
Substitutions and Additions
Frozen berries can be substituted for fresh berries. Also, Try using a Canned Pie Filling over making a fresh Blueberry Filling.
Almond Extra is a delicious substitution for Vanilla Extra in the glaze
Adding a simple sweeten cream cheese is a welcome treat.

- Add additional sugar to fruit for more sweetness

Why is my Puff Pastry Soggy?
Soggy bottoms can be a result of the filling having too much liquid or the puff pastry needs to bake just a little longer. Use Cornstarch to thicken filling before placing on pastry
What temperature do you cook Puff Pastry?
Puff Pastry is best cooked at 400 degrees in a preheated oven. Make sure to leave room in between turnovers as they puff and expand while baking.

- Allow Turnovers to fully cool before adding a drizzle of glaze

- In a small bowl combine Powdered Sugar, Extract and Milk and whisk to combine. Carefully drizzle glaze over turnovers.
