Who doesn’t love BBQ, right? But just wait. These BBQ Chicken Sliders are packed with delicious chicken, Pineapple and Red Onion. The combination makes this a true party in your mouth and one you will go back for again and again.

Instant Pot Shredded Chicken
If you have followed me long enough you know I love to Meal Prep for easy dinners later. Needless to say I make Shredded Chicken in my Instant Pot and freeze dinner size portions (about 3 cups) to use in casseroles, sandwiches, enchiladas, taquitos, and of course salads!
Making Shredded Chicken is very quick and easy. In your Instant Pot place 1 cup of liquid, salt and pepper 2-3 large chicken breasts and add 2 tsp garlic. Set your Instant Pot to Manual High Pressure (Pressure Cook) for 15 minutes with a full natural release. Then remove chicken and shred with 2 forks. Super simple and perfect for any recipe.
How to make BBQ Chicken Sliders
Hawaiian Rolls are perfect for this recipe, however you can certainly use any Parker House style roll. Slice the rolls in half horizontally and place the BBQ Shredded Chicken on the rolls. Then top with Pineapple and Red Onion and of course cheese! Place the top of the rolls on top and brush top with melted butter and bake. It’s delicious.

Sliders have become popular recently and are made in a variety of ways. They are typically a smaller version of a favorite recipe sandwich. One that can be eaten in a few bites and perfect as a snack or appetizer. However, stack a few sliders on a plate and you have a full meal!
What if I don’t like an Ingredient?
Hey! No Problem. If you don’t like an ingredient, then take it off! Maybe you don’t care for onions like my picky eater. Just leave them off and you will have a slider made specifically for your taste buds.

When slicing the Hawaiian Rolls, do not separate them. Use a bread knife and cut through them all at once horizontally. After the BBQ Chicken Sliders are baked, you can use a knife and slice the sliders individually.

- 1 pkg Hawaiian Rolls Cut in half horizontally
- 3 Cups Shredded Chicken
- 1 Cup BBQ Sauce (your favorite brand)
- 1 Cup Pineapple
- 1/4 Cup Red Onion
- 1 Cup Mozzarella Cheese
- 2 Tbs Melted Butter
- 1/2 tsp Garlic Seasonings
- Slice Hawaiian Rolls in half horizontally and place bottom half in a greased casserole dish
- In a bowl mix shredded chicken and BBQ Sauce. Stir to combine
- Spread BBQ Chicken evenly over rolls
- Top with Pineapple tidbits
- Top with Red Onion
- Sprinkle Cheese on top
- Place top of Rolls on top of sliders
- Melt Butter and mix in garlic
- Brush tops of rolls with melted butter and garlic mixture
- Bake at 350 for 8-10 minutes or until golden brown
