    Mini Easter Cheesecakes

    Making Mini Easter Cheesecakes in the Instant Pot is a lot of fun and pretty quick to throw all the ingredients together. I love the cute little mason jars that make these individual desserts all the rage and so fun to enjoy or even gift.

    Mini Cheesecakes can be baked in muffin pans, or mini mason jars. I love to pressure cook mini individual cheesecakes in the Insta Pot, it's so easy and a delicious beautifully present dessert is always a fun idea.

    Mini Cheesecakes for Easter

    I'll cut to the chase, here is your shopping list but it's highly likely that you may have most ingredient items at home and can get busy making cheesecake in a jar recipe right now

    Shopping List

    • Cream Cheese
    • Sour Cream
    • Sugar
    • Vanilla
    • Egg
    • Graham Crackers
    • Butter
    • Easter Candy

    When making Easter Mason Jar Cheesecake I like to use Cadbury Eggs, Robin Eggs, M&M's, Peanut Butter Cups, Lemon Kit Kats, and the list could go on. Choose your favorite.

    Making Graham Cracker Crust

    Making a quick Graham Cracker crust and is by far better than purchasing any store bought crust. This recipe you will need to make a small batch. Here is exactly what I did.

    I used 5 Graham Cracker rectangles for about ⅔ cup of crushed cracker crumbs. Use a food processor to finely crush crackers.

    Add sugar and mix together. Then add melted butter and stir all together.

    Once all the crumbs are covered in butter they will clump together and resemble coarse crumb mixture.

    How to make Mini Easter Cheesecakes Recipes

    Spay mini mason jars with cooking spray and add a heaping spoonful of Graham Cracker Crumbs into each jar. Using the back of a spoon or small ladle, press crumbs to bottom of jar evenly and set aside making a graham cracker crust.

    Optional: place jars in refrigerator to chill crust while preparing cheesecake filling. I found if crust is packed down nicely there was no need to chill.

    In a large bowl place room temperature cream cheese, sour cream, sugar, and vanilla extract and cream together using a hand mixer.

    This recipe is a small batch so there is no need to use a larger stand mixer unless you choose to double this recipe.

    Once cream cheese mixture is mixed together add 1 egg and mix throughly. Using a medium cookie scoop or spoon place cheesecake filling in each jar making to to evenly fill all 6 mini mason jars.

    Chop Easter Candy and place on top before pressure cooking. I've made Cadbury Mini Egg Cheesecakes, but you can also try M&M Cheesecakes, Robin Eggs, Peanut Butter Cups, or your favorite candies.

    Add 1 cups of water to Instant Pot Liner and place a trivet in the bottom of the Instant Pot Liner. All 6 mini mason jars will fit on the trivet. Stack additional jars if necessary on top.

    Mini Cheesecakes in Instant Pot

    Loosely place aluminum foil on top to cover Insta pot cheesecake before pressure cooking.

    Pressure Cook on High for 3 minutes cooking time allowing a 10 minute Natural Pressure Release before releasing the remaining pressure and opening lid.

    Open lid, remove foil and carefully remove mini cheesecakes for Easter. Use a paper towel to quickly dap tops of cheesecake to collect any liquid if necessary.

    Allow Cheesecake to chill for 4 hour or overnight in refrigerator before serving. Top with additional Easter Candy and optional whipping cream.

    Serving size ~ 1 mini mason jar 4oz ~ Recipe takes about 20 minutes to prepare and pressure cook with NPR

    Tips:

    These tips are here for a purpose, to help you make this recipe exactly like I have.

    • Using room temperature cream cheese, and egg is very important. So although this recipe is pretty much a dump, mix and go type recipe please take the time to allow these ingredients to sit on the counter for an hour before beginning
    • There is no need to over mix the filling. I like to cream all the ingredients together until smooth and then add egg and mix everything until thoroughly mixed.
    • Hand Chop Candy. Candy is best chopped by hand over using a food processor. You will get larger pieces of candy which is ideal.

    Mini Cheesecakes for Easter

    I'm in love with this adorable dessert recipe. These small mason jars are 4ounces and are a perfect individual desserts. Especially for an Easter Brunch or just because.

    Mason Jars come in all shapes and sizes. You can of course use larger jars if you wish. I do love the 4ounce mason jars and found them to be a perfect size. At first I thought they would be too small, but found it was a nice sweet ending to a beautiful meal.

    Mini Cheesecake Recipes Ideas

    There are endless combinations when it comes to making Mini Insta Pot Cheese Cake. I'd love to hear what combination you put together. Below are a few of mine!

    • Fruit Topping: Traditional New York Cheesecake
    • Cookie Crumbs: Oreo, Chips Ahoy, Nutter Butter, Circus Animal
    • Funfetti: Adding 1 teaspoon sprinkles to cheesecake mix
    • Holiday: Use holiday specific candy for each holiday
    • Peanut Butter: Add mini Peanut Butter Cups after pressure cooking is complete to a chilled Mini Cheesecake

    I'm always amazed and how these desserts turned out perfect every time. It's a keeper recipe and so handy to have and make for a mini baked cheesecake recipe.

    Ingredients

    Graham Cracker Crust

    • ⅔ Cup Graham Cracker Crumbs - About 5 Graham Cracker Rectangles Crushed
    • 2 teaspoon Sugar
    • 2 Tablespoon Butter - melted

    Cheesecake Filling

    • 8 ounce Cream Cheese - Softened
    • 2 Tablespoon Sour Cream
    • 2 Tablespoon Sugar
    • ½ teaspoon Vanilla Extract
    • pinch Salt
    • 1 Egg - Large

    Topping

    • Easter Candy - Chopped
    • Whipped Topping - Optional

    Instructions

    Graham Cracker Crust

    • Using a food processor crush about 5 rectangle graham crackers until fine crumbs
    • Add 2 teaspoons sugar and 2 tablespoons melted butter and mix to combine. Crumbs will be coarse.
    • Add heaping spoonful to each of the 6 mini mason jars and use back of spoon or ladle to pack crumbs down firmly and evenly

    Cheesecake Filling

    • In a large mixing bowl combine softened cream cheese, sour cream, sugar, salt and vanilla extract.
    • Using a hand mixer whip to combine ingredients
    • Add room temperature egg and combine to mix ingredients together.
    • Using a medium cookie scoop or spoon place cheesecake filling in each jar making to to evenly fill all 6 mini mason jars.
    • Chop Easter Candy and place on top before pressure cooking.
