Making a no bake cheesecake recipe is super simple, you might also enjoy this white chocolate raspberry cheesecake, oh it's good! But trust me when I tell you how simple this recipe truly is!
Making cream cheese bites never gets old. In fact, I love to taste test just to make sure they are perfect. What I love most is this recipe is easily enjoyed as a dessert without the hassle of making a big dessert. A quick strawberry bite to finish off a delicious meal. And no one will tell if you go back for 2 or 3 more.

- Strawberries
- Cream Cheese
- Powdered Sugar
- Sour Cream
- Vanilla Extract
- Heavy Whipping Cream
- Mini Chocolate Chips
- Graham Cracker
Let's Make Strawberry Cheesecake Bites!
Start by washing and removing stems from large strawberries. Then use a small spoon or my preference, a pairing knife to hull out the inside of the strawberry. Remember the more room you make the more cheesecake stuffing you can add inside. YUM!
You can easily cut off the tip of the strawberry which will allow the berries to stand on end. It's a fun and creative way to serve this quick and easy dessert bites recipe.
Make sure to place prepared strawberries on a paper towel. This helps to collect any juices from inside the berry. It's a simple tip I recommend which also helps when stuffing the cheesecake inside later.
In a separate large bowl combine softened cream cheese, powdered sugar, sour cream, and vanilla extract using a hand mixer until smooth. You can also add a tablespoon or two of whipping cream which can help to give some lift to the mixer. Just keep in mind you do not want to thin down the filling.
Place no bake cheesecake filling into a piping bag or a large zip-loc bag and snip the corner. You can also use a piping tip if you have one which will make those pretty star patterns in the cheesecake. It won't change the taste but it will add a little flare to your dessert.

Garnish your strawberry cream cheese bites with mini chocolate chips and a piece of graham cracker. Aren't they so cute? I sure think so and the semi sweet mini chocolate chips really help balance the sweet cheesecake with the strawberry for a beautiful finishing touch!
I find it's best to break up graham crackers into small pieces, I rectangle graham cracker is plenty for all the berries. Or you can even crush the cracker up and sprinkle graham cracker crumbs on top too.

- Lemon Curd - Add lemon curd inside the hulled strawberry before adding cheesecake mixture on top. Mmmm, I'm going crazy with this fun surprise hidden inside. Delish
- Brownie Bites - Top a brownie bite with no bake cheesecake bites recipe and garnish with a strawberry or even cut a strawberry into slices. It's a fun mini dessert.
- Strawberry Topping - Adding a little strawberry sauce into the hull of the strawberry or even drizzling on top of a completed bite is wonderful.
