When I think of Salsa, I think hot and spicy. This Dessert Pineapple Salsa Recipe is anything but hot and spicy. In fact, it’s sweet juices, and a variety of textures pair so well when served with Cinnamon Chips or better yet, over fresh Vanilla Ice Cream! Don’t believe me? Give it a try and your world will be rocked.

I'm almost giddy to share this recipe with you. It's one of those stupid simple recipes that makes me wonder why everyone isn't making it. This dessert pairs nicely with any Mexican meal, or finishes off a summer evening with guests. It's refreshing and hits the spot!
This recipe is also not a typical Pineapple Salsa as it is purely sweet and meant as a dessert topping. It is refreshing and delicious and will cap off your favorite meal so nicely.
Making this recipe is stupid simple, especially since it’s thrown together in seconds and will dress up any dessert almost instantly. I do recommend using fresh pineapple. Nothing better than fresh when possible. Then choose a nice tart apple, like a Granny Smith Apple. The sweet and tart work so well together.

Ingredients
You will need only a few ingredients. Pineapple, preferably fresh, Green Apple, Orange Juice and Coconut. That is all there is to this recipe. I won’t bore you with a long story but I will share with you a few tips and tricks to making this recipe that I find to be valuable.
I like to use this Pineapple Corer found on Amazon. It’s just slick and easy to use and very affordable. The results are nice juicy rings of pineapple with the core removed.

Peeling and coring an apple couldn’t be easier with this Apple Peeler. It reminds me of watching my grandma in the kitchen but truth be told is one of my favorite kitchen gadgets and so handy for so many things.
How to make Dessert Sweet Salsa
Slice and chop about ½ Pineapple and 1 -2 apples diced in small pieces. You will want both the pineapple and apple to be diced fairly small. Once diced, add to a bowl and add 3-4 Tablespoons of Orange Juice and then sprinkle sweetened coconut on top. Give a quick stir and it’s ready.

Dessert Pineapple Salsa can be made ahead of time which is fabulous because it will be your little secret when you pull it out of the refrigerator and serve. Everyone will be thrilled.
Serve salsa with Cinnamon Chips or better yet with a scoop of Vanilla Ice Cream. You won’t need a large serving, just a scoop with some salsa is the perfect ending to a fantastic meal!
How to Choose a Ripe Pineapple?
When choosing a pineapple make sure to choose one with a firm shell that is slightly soft when you give it a squeeze. Pineapples that are completely hard when squeezed are unlikely to be fully ripe.
Storing Salsa
Store Salsa in refrigerator for up to a week. Recipe can be cut in half in needed.
