Instructions
Wash fresh figs and remove stems. 1 pound Figs
Slice figs into quarters and place in food processor.
Puree figs to desired consistency. Puree smooth for a smooth jam, or leave some chunks for a chunky jam consistency.
Place fig puree into a sauce pan and add honey, granulated sugar, water and orange juice. ¼ Cup Honey, ¼-½ Cup Granulated Sugar, 2 Tablespoons Orange Juice, ¼ Cup Water
Carefully zest orange using a vegetable peeler making a wide strip of orange peel and add to saucepan. 2 strips Orange Peel Zest
Heat mixture over medium/high heat and bring to a boil. Stir continuously for 2 minutes.
Reduce heat to medium/low and simmer mixture for 10-13 minutes. Stir mixture as needed allowing steam to evaporate and thicken jam.
Jam is almost done when you can scrape bottom of pan and mixture is slow to fill in gap.
Add vanilla extract and stir to combine. Allow to simmer for additional 1-2 minutes before removing from heat. 1 teaspoon Vanilla Extract
Place jam in sterilized mason jars. Makes approximately 2 cups.

Serving size approximately 2 Tablespoons
Figs:
Turkey or Black Mission Figs will yield a sweeter jam while Tiger or ??@?@?@ will yield are less sweet flavor.Add more or less granulated sugar to achieve desired flavor for your jamStorage & Make Ahead
Store: Keep your unsealed homemade fig jam in an airtight container or mason jar in the fridge for up to 2-3 weeks.
Freeze: Fig jam freezes well! Store in a freezer-safe container, leaving space for expansion, and freeze for up to 6 months.
Make Ahead: You can easily make this jam ahead of time and store it sealed in a cool dry place or freezer until you’re ready to use or gift it.
