Juicy chicken breasts are packed with a creamy mixture of spinach, cheese, and caramelized onions, then cooked to golden perfection in the air fryer. This quick weeknight dinner is bursting with so much flavor and is the best way to turn simple ingredients into an easy dinner that feels extra special.
Heat skillet over medium/high heat on stove. Add butter and melt.
Add diced onion to hot pan and sauté tossing in melted butter
Remove onions from heat when caramelized and fully cooked
In a separate bowl combine softened cream cheese with grated parmesan cheese, grated mozzarella cheese and cooked onions. Mix to combine.
Prepare Chicken
Trim any excess fat from the chicken breasts and pat them dry with paper towels.
Carefully slice chicken breasts in half part way through. Allowing for a pocket to stuff filling inside.
Stuff ¼ cup of filling into chicken breasts and close using a toothpick to hold together.
Seasonings
In a small bowl combine seasonings and mix to combine
Rub Olive Oil over stuffed chicken breasts and sprinkle with seasonings.
Season both sides of stuffed chicken breasts with seasonings and place into preheat air fryer.
Air Fryer Stuffed Chicken Breasts
Preheat your air fryer to 350°F for 5 minutes.
Air Fry at 350F degrees for 16-18 minutes. Turning Chicken breasts over half way through.
Chicken is fully cooked with internal temperature reaches 165F degrees with a digital thermometer.
Top with additional mozzarella cheese (optional) and allow cheeses to melt in warm air fryer.
Serve hot and enjoy!

Chicken Breasts: Recipe tested with medium sized breast. All with even thicknesses. When using large and small breasts air frying time will differ. Adjust time accordingly and test internal temperature at thickest point to reach 165F degrees.Spice Rub: Seasoning raw chicken before Air Frying gives additional flavors to meat and is delicious.
