Blueberry Turnovers made with a homemade Blueberry filling recipe are divine. Flakey Pepperidge Farm Puff Pasty filled with fresh berries makes these turnovers irresistible
Allow pastry to sit on counter to thaw completely. This can take an hour or so.
Sprinkle a little flour or sugar onto the work surface and place 1 room temperature pastry sheet, carefully unfolding
Using a rolling pin gently press and roll dough. This is a quick and easy rolling process to even the edges forming a square.
Slice puff pastry using a knife or pizza cutter. Cut sheet into 4 equal parts by cutting dough in half lengthwise and then cutting again across the middle.
Filling
Wash fresh fruit and remove any mushy or rotten fruit before beginning.
In a small saucepan add water, cornstarch, sugar and freshly washed berries.
Heat over medium / high heat stirring as needed. As mixture begins to boil continue to stir and scrape bottom of saucepan.
Once sauce reaches desired consistency remove from heat. Break open a few blueberries which turns sauce a beautiful deep purple color leaving most of the berries whole.
Place 1-2 heaping tablespoons pie filling on each square of puff pastry. Use an egg wash on the edges and fold over pastry forming a triangle.
Using a fork to press seams together and seal edges each turnover.
Place on parchment paper lined baking sheet. Brush a light egg wash over turnover
Bake at 400 Degrees for 18-20 minutes or until golden brown. Do not underbake.
Allow Turnovers to fully cool before adding a drizzle of glaze
Glaze
In a small bowl combine Powdered Sugar, Extract and Milk and whisk to combine. Carefully drizzle glaze over turnovers.
