In a large bowl cream butter and sugar together until light and fluffy. Add a teaspoon peppermint extract and mix together.
In a small bowl combine flour and cornstarch. Gradually add dry ingredients to butter mixture.
Chill cookie dough for 30 minutes to 1 hour in refrigerator making sure to cover with plastic wrap.
Using a small cookie scoop, scoop cookie dough and place on cookie sheet to bake.
Bake at 350 degrees for 9-11 minutes or until light brown around the edges.
Allow cookies to cool on baking sheet for a couple minutes before moving to cooling rack
Frosting
In a small bowl melt white chocolate in microwave for 30 seconds and stir until smooth. If additional time is needed heat for 15 seconds and stir.
In a separate bowl cream butter and powdered sugar until smooth.
Add milk and peppermint extract and cream together. Add red food coloring if desired
Mix in melted white chocolate.
Frost Cookies and sprinkle with crushed peppermint for garnish.
