In a large bowl combine dry ingredients. Flour, Sugar, Cocoa, Baking Powder and Salt and stir to combine. This helps mix up the coca powder evenly throughout so you do not get clumps.
Create a “well” in the center. Add eggs, vegetable oil, milk, and vanilla. With a fork or large spoon mix batter to combine ingredients. There is no need to over mix or even use a hand mixer. It will only take a minute to combine the wet ingredients with the dry ingredients.
Spray Waffle Iron with Cooking Spray and pour batter into mold. Follow the recommendation of your waffle iron on how to fill and how long to cook. Generally the light comes on when started and when the light goes off, the waffle is ready to take out.
Serve hot with fresh fruits, berries, sweet cream, and even a chocolate drizzle. My favorite is with Fruit Syrup, Sweetened Whipping Cream, and Fresh Fruit.
