Eggs

Cottage Cheese

Heavy Cream or Half and Half

cup
Fresh Spinach
⅓
cup
Feta Cheese
Salt and Pepper to Taste

Butter
Melted
Instructions
Place eggs, cottage cheese and Cream into a blender and combine on medium speed until smooth. It only takes 15-30 seconds
Brush Melted Butter on Egg Bite Silicone Mold
Wash and rough chop spinach
Place 1 -2 TBS chopped spinach in each mold
Add 1 teaspoon of Feta Cheese to each mold on top of Spinach
Pour egg mixture and fill each mold ¾ full
Cover with foil
Add 1 cup of water to the liner of the Instant Pot / Pressure Cooker
Place Trivet inside of Pressure Cooker
Place Silicone mold carefully on trivet Cook on Manual / Pressure Cook for 10 minutes with a 5 minute Natural Release (NR)
Remove silicone mold from Instant Pot ~ it will be hot Carefully remove egg bites from mold by flipping on a plate
