Ingredients
1 ½

Red and Yellow New Potatoes

Sweet Peas
Frozen

Instructions
Instant Pot Directions
Add 1 cup water to a 6qt Instant Pot or 1 ½ Cup water to an 8qt Instant Pot and place a trivet on top
Wash and slice new potatoes in half. Season with Salt and Pepper and place potatoes on Trivet.
Set Instant Pot to Pressure Cook High for 5 minutes. Make sure to close pressure valve and secure lid.
Steam peas in microwave until cooked or boil in water on stove
Release Pressure when cooking time has completed and remove potatoes. Rinse liquid out of liner and place liner back in pressure cooker.
Set to Saute and wait until the pressure cooker reads hot. Add Butter and grated onion and saute until golden.
Add 1 ½ tablespoon flour to butter and onions to make roux
As butter melts with flour it will create a paste. Saute and cook paste for 45 seconds to 1 minute being careful not to burn paste.
Add half and half, and salt and pepper to taste and stir to combine creating a cream sauce. Sauce will thicken as it cooks.
Add peas to cream sauce and allow to cook for 1-2 minutes. Add Cooked Potatoes and Stir to combine. Serve Hot.
Stove Top Directions
Fill pot with water over high heat
Wash and cut potatoes in half and place in pot. Cook for 9 minutes or until potatoes are mostly tender when poked with a fork or knife.
Add peas to potatoes and cook 2-3 more minutes. Remove from heat and drain liquid.
In a frying pan melt butter and combine with flour creating a roux. Cook through and add Half & Half, and salt and pepper.
Whisk to combine over medium/high heat creating a cream sauce.
Add cooked peas and potatoes and stir to combine. Serve Hot
Store leftovers in sealed container in refrigerator for up to 1 week.
Notes
Can I use all Milk or all Heavy Cream?
Of course you can, however I find a combination of both milk and Heavy Cream is a good balance of creaminess and still lowers the calories a bit.
Optional Add-ins
I do love to add Parmesan Cheese and fresh herbs. You can also add finely grated onion to give a deeper flavor.
