Add water to the bottom of the Instant Pot. 1 Cup for a 6qt, 1 ½ Cups for an 8 qt. Place trivet on top
Wash Sweet Potatoes and Poke with a fork.
Rub skins with Olive Oil and season with salt. Place Sweet Potatoes in Instant Pot
Pressure Cook on High. Small (2 inch width) 15 Minutes. Medium (3-4 inch width) 35 Minutes. Large (4+ inch width) 60 Minutes.
Allow a 12 minute Natural Pressure Release
Carefully remove hot sweet potatoes. Poke with a fork or knife to check if done. Sweet Potato should be soft and easy to poke. If Additional time is needed add a few extra minutes.
