German Pancakes often called Cloud Pancakes or Dutch Baby Pancakes are light and fluffy pancake served with fresh berries and sweetened cream or a drizzle of syrup.
In a blender Add Eggs, Milk, Flour, Sugar, Salt, and Cinnamon and blend for 60 seconds. Scrape down sides if needed
Heat 10 in cast iron skillet over medium/high heat. Melt 3 Tbl Butter in skillet. Use Pastry Brush to brush melted butter on sides and bottom of skillet
Pour Batter into hot skillet
Place skillet into preheated oven and Bake for 15-18 minutes.
Optional Garnish
Dust with Powdered Sugar
Drizzle with syrups

Add Whipping Cream and Berries or a Dusting of Powdered Sugar to German Pancake. Maple or Buttermilk Syrups are also delicious.
How to make Sweetened Whipping Cream
Whip 1 cup of Heavy Whipping cream with a hand mixer until peaks form. Add 2-3 Tablespoons Powder Sugar and 1 teaspoon Vanilla and continue whipping until stiff peaks.
How to clean a Cast Iron Skillet
To clean a cast-iron skillet use a scouring brush and hot water. If needed only a small drop of detergent and rinse well. Wipe dry and season with a few drops of oil.
