In a bowl combine stuffing ingredients. Diced green apples, cranberries, chopped pecans, bread crumbs, nutmeg, basil, rosemary, green onions, thyme, and salt and pepper. Stir to combine and set aside.
Lay your pork loin on a cutting board and with a sharp knife butterfly the pork Loin but do not cut all the way through. Open the pork loin like a book and now you will spread the filling on the pork
Optional – You can use a meat mallet to pound out the pork loin to flatten and keep the thickness uniform.
From the long side, begin to roll up the pork loin making sure to keep the stuffing inside
Use 3-4 pieces of butcher string to tie up the stuffed pork loin
Heat 2 tbs olive oil in a frying pan and heat over medium high heat on stove.
Brown all sides of pork loin in hot olive oil. About 1 minute per side.
Place Pork Loin in a roaster pan, 9×13 pan, or Dutch Oven
Tent with foil
Bake at 350 degrees for 40-55 minutes
Remove from oven checking internal temperature. Pork should reach an internal temperature of 145 degrees to reach a slight pink stage or 165 degrees for well done
